Slow Cooker Sweet and Tangy Chicken

Yum! Que sabroso! I wanted MORE sauce! (I'm not understanding how people thought there was too much sauce.) I used every drop of two 18-oz bottles of Sweet Baby Ray's Honey BBQ sauce and one can of crushed (not chunk) pineapple with all the juice. I used 2 green peppers instead of one. Garlic and red onion as directed. I used 8 skinless boneless chicken thighs. (My experience is that dark meat chicken is the best to use in a slow cooker. Breasts dry out in a slow cooker.) I cooked it on low for 8 hours and it wasn't overcooked at all. Perhaps that's because I used dark meat instead of breasts. Dark meat cooks more slowly. Served over rice. Kids ages 11, 13 and 13 raved about it. Next time, I will double all the ingredients except the chicken. Like I said, I wanted more sauce!

Lemon Cranberry Muffins

These were very good. I made them according to the directions. There are several things I will change when I make them ag again. I will double the amount of cranberries - there were not enough to suit my love of cranberries. I will add more sugar because the muffins weren't all that sweet. I will also sprinkle sugar on top. I will add more lemon. I couldn't even taste the lemon. But I really did like these.

Chicken Teriyaki - It's a Secret

The problem with this recipe is that it's so SALTY as to be virtually inedible. I'm a salt lover, but I could barely eat it. My kids wouldn't eat it. If I make it again, I will cut way, way back on the soy sauce.

Pistachio Fluff Fruit Salad

I like sweets, but this was way too sweet. Next time I'd add another can on mandarin oragnes to counteract the sweetness. I also decided to slice bananas over the top rather than mixing them in, so that if the salad wasn't all eaten at one sitting, the whole salad wouldn't be ruined the next day by bad bananas. Still yummy overall, just too doggone sweet.

Swiss Christmas Bread

This is almost exactly like my recipe for JULEKAGE (Norwegian Christmas bread). Don't bake it in the casserole, but rather form it into a circular loaf and bake on a cookie sheet. Butter the top when it comes out of the oven. It is best when sliced and toasted, then buttered and sprinkled with cinnamon sugar. Store wrapped in plastic or a Ziploc bag. Yummy!

Chicken Enchiladas I

I'm from New Mexico. In my world, enchiladas are NEVER made from *flour* tortillas! We use corn tortillas that have first been softened in either oil (preferred) or by steaming. Try these with corn tortillas for something more authentic. Also, spice it up with some Rotel. This is too bland.
