My favorite things to cook
I adore big family meals where everyone gathers together. Thanksgiving is my favorite holiday. I have been using a brine on my birds for decades. My Turkey is the talk of the town! ;) My family also does a big open house on Christmas Eve with a lot of italian traditional fish dishes. I love grilling in any month of the year.

Turkey Brine
I will never roast a turkey without a brine. This is an easy, basic brine. It will ensure a juicy, flavorful bird! Brining drastically shortens oven time... Use a good meat thermometer to indicate doneness.

Easter Meat Pie
This is the authentic Italian PizzaGaina that I remember from my Sicilian Grandmother with one small exception... Hers was made with pizza dough instead of pie crust and was baked in a springform pan. Oherwise, the taste of the filling is an exact duplication of her old-world recipe! PizzaGaina is made for Easter in southern Italy. This dish takes on different forms and names depending on where you’re from. It’s also known as Pizza Rustica and Italian Meat Pie. This is an integral part of an Italian Easter tradition!!

Apple Pie I
This apple pie recipe has quickly become the ONLY apple pie that I'll ever need! It's perfect every time! I use at least two varieties of apple for a varied crispness/sweetness in my pie! You're gonna love it!!
