Homemade Yummy Fudge

Seven Layer Tortilla Pie

I am not allowed to eat beans, tomatos, and salsa but this sounded so good I made for my husband. It took me awhile to figure out how to mash the pinto beans I made a huge mess with that but finally figured it out. The pinto bean mixture looked gross but smelt good. The black bean mixture smelled really bad. I thought to myself, "what am I doing, he is not going to eat this mess"! It calls for 7 Tortillas, but I only used 5 I do not know where the other 2 go, maybe I was supposed to double up or something? Anyway after it cooked it still didn't look very tasty, and I was afraid he would try it and spit it out but when he tasted it his eyes got so big and he said "mmmmmmmmm oh my god its so good, I love it" Since I'm not allowed to eat it I asked him what it taste like and he said he can't describe it but just taste like REALLY good mexican food. I am adding this recipe to our family recipe book, its a keeper. THANX!

Chili Dog Casserole II

I can't eat chili or flour tortillas so I made this for my husband and he loved it. He was really blown away by how good it was and I'm so glad cause it was one of the easiest quickest things to make.

Oregano Chicken

One Dish Chicken Noodles

Awsome & simple. I used Healthy Harvest egg noodles and didn't use any chicken as I dont really like meat that much, and used ALOT of can peas, it was sooooo yummy.

Pumpkin Chocolate Chip Muffins

These were really great, very moist. Although they taste great w/ the chocolate chips, I think I might make them again w/out the chips. I used applesauce instead of oil, & brown sugar instead of white. And I was also very generous when adding the pumpkin, added alittle more then i was supossed to.

Tasty Lentil Tacos

These were so good, I even ate most of it with out the taco shells. I did not add the salsa and I cut back alot on the chili powder. The only thing I used to top it was Tofutti's Sour Cream.

Lentil Loaf

This was great but made ALOT of changes. I used beef broth for the water and vegetable broth. Ketchup for the Tomato paste, 2 1/2 cups oatmeal for the white bread. 1/2 cup pureed silken tofu for the eggs, onion soup mix and no bread crumbs. I also topped the loaf w/ a mixture of 1/3 cup ketchup & 1/3 cup brown sugar before baking. Alot of people where saying how it was sepearting or falling apart, I do not have that problem at all. Its not moist or anything, maybe to much oatmeal, but sliced on toast w/ ketchup and mayo, it was out of this world.

deliciously moist! this taste so good, but I made a few changes, I put 6 teaspoons of Ener-G egg replacer in w/ the 1 cup of water, and I used 1/4 cup applesauce in place of the oil. I am going to make this more often.

Chewy Coconut Cookies

I give the taste 5 stars, these taste amazing. I was so worried they wouldn't turned out, they don't look anything like the picture thats for sure. When I started slowly adding the flour to the mixture after just about half it got really dry and I had to try and work the rest in w/ a spoon instead of the mixer. I added more butter but that didn't work either. I wished I could've dropped them on to the cookie dish like the recipe says but I had to use my hands and shape them and FORCE them to stay together it was really crumbly. But even after all that they still turned out wonderful. :-) It was a lot of trouble so I don't think i'll make again.

Veggie Pot Pie

wow I was very surprised by this I normal don't like using vegetable broth in any recipe but this with the soy sauce it was the right amount of everything and the sauce tasted like beef broth. I used cauliflower, broccoli, peas, potato, carrots and Celery. and 4tbsp of cornstarch. I ate so much of this pie last night I could hardly move. and I had enough filling for 2 pies :-) going to have another slice now. Thanks for the recipe.

Mushroom Patties

OH my god this is amazing. This is my favorite recipe i've made on this site. I can not eat pecan so i used Almonds instead, I almost used the whole packet of onion soup mix but i think it gave it more flavor. Also I can't have the condensed soup so i used an Organic Cream of Mushroom but still added the milk. They smelt amazing when i was done mixing everything but when i tried to fry them they all fell apart and it looked like i was cooking hashbrowns, but i do not care what they look like they taste so good I was ready to dump it into a bowl and just eat it like that. After I baked it with soup it was even better, I will be making this again and again. Thank you Donna for such an amazing recipe.
