Broccoli Salad II

Pretty good, and my 4yr old loves it. I made a few changes... we are vegetarian so I did not add the bacon, but did add in onions and walnuts. I did 1 cup of vegenaise (vegan mayo) with 2tbsp aged white wine vinegar and replaced the white refined sugar with 1/4 cup raw agave nectar. The Agave did give it a different taste but I still think its pretty good and if my 4yr old loves it then thats all i can ask for :-)

Five-Cheese Stuffed Shells

ok only changed a few things. I did not add the egg (i hate cooking with eggs) it did make my filling a bit runny and melty when it was done but that is fine with me. I did not use the cheese recommend I just used up the shredded cheeses I had in the fridge. and I just LOVE cottage cheese, so instead of half cottage, half ricotta, I just used all cottage cheese. I loved it very much and will make again :-)

Easy Four Cheese Lasagna

These was the best lasagna I have ever eaten. I used one can of sauce and only about 1cup of sauce from the 2nd can I bought. I followed the recipe exact except adding a layer of filling on top of each noodle which I made of cooked broccoli that I ran through the food processor to make sort of mashed, I also minced onion, green bell pepper and mushroom and stirred it into the broccoli mixture. It was the PERFECT blend of flavors and the most wonderful lasagna ever. Thank You Thank You Thank You.

Veggie Pot Pie

wow I was very surprised by this I normal don't like using vegetable broth in any recipe but this with the soy sauce it was the right amount of everything and the sauce tasted like beef broth. I used cauliflower, broccoli, peas, potato, carrots and Celery. and 4tbsp of cornstarch. I ate so much of this pie last night I could hardly move. and I had enough filling for 2 pies :-) going to have another slice now. Thanks for the recipe.

Speedy Homemade Salsa

Banana Walnut Cornbread

I had exactly 3 bananas that probably were not gonna make it til morning w/out going bad so I was searching for something to do with them and found this recipe. I love that it doesn't call for white flour. It turned out really dry and crumbly for me, I don't really like it, its just so dry. Oh well.

Vegetarian Cassoulet

This was really good the only thing I might do different next time is used canned beans rather than dry. It was like soup when I started but by the time the beans had cooked the liquid was almost gone, what was left was kinda slimmy. It's still very good, I love the flavor. Next time i will cook on the stove, used canned beans added the potatoes at the same time and only cook til potatoes are done, then it should be more like a soup. I might play around w/ dried spices also cause the fresh ones are to expensive and I usually only end up using a tiny bit then they go bad so its a waste of money.

Chewy Coconut Cookies

I give the taste 5 stars, these taste amazing. I was so worried they wouldn't turned out, they don't look anything like the picture thats for sure. When I started slowly adding the flour to the mixture after just about half it got really dry and I had to try and work the rest in w/ a spoon instead of the mixer. I added more butter but that didn't work either. I wished I could've dropped them on to the cookie dish like the recipe says but I had to use my hands and shape them and FORCE them to stay together it was really crumbly. But even after all that they still turned out wonderful. :-) It was a lot of trouble so I don't think i'll make again.

Banana Loaf Cake II

deliciously moist! this taste so good, but I made a few changes, I put 6 teaspoons of Ener-G egg replacer in w/ the 1 cup of water, and I used 1/4 cup applesauce in place of the oil. I am going to make this more often.

I am searching for a recipe that will help me like eggplant. I give it 3 stars because the taste wasn't bad, I just don't like mushy foods, but if u like eggplant i'm sure you'll love it.

Raw Brownies

This taste almost like a carob fudge I make. My fudge is better but these are really good. I only did 1 cup walnuts and added 1 cup coconut. It needed a little more honey, but otherwise this is great.

Lentil Loaf

This was great but made ALOT of changes. I used beef broth for the water and vegetable broth. Ketchup for the Tomato paste, 2 1/2 cups oatmeal for the white bread. 1/2 cup pureed silken tofu for the eggs, onion soup mix and no bread crumbs. I also topped the loaf w/ a mixture of 1/3 cup ketchup & 1/3 cup brown sugar before baking. Alot of people where saying how it was sepearting or falling apart, I do not have that problem at all. Its not moist or anything, maybe to much oatmeal, but sliced on toast w/ ketchup and mayo, it was out of this world.
