I am happily married, no kids but 2 cats. I love to cook. I have Interstitial Cystitis so there are ALOT of foods that I can not have, and on top of that I am vegan. Although I have so many limitations I never run out of food to cook or eat. I love being vegan. AIM: Layla303

Vegan alfredo & carob fudge, but I wouldn't say favorite thing to cook, more like favorite thing to eat! :-)

My cooking triumphs
I am getting good at this and can make almost anything vegan. I have amazed myself at times with things like Vegan Alfredo, Vegan Grilled Cheese & Vegan Salisbury steak.
My cooking tragedies
Some times cooking vegan has its ups & downs. Recipes that call for eggs usually give me problems and sometimes don't turn out. I have a hard time making things like pancakes, brownies, & vegan cupcakes.

Five-Cheese Stuffed Shells
ok only changed a few things. I did not add the egg (i hate cooking with eggs) it did make my filling a bit runny and melty when it was done but that is fine with me. I did not use the cheese recommend I just used up the shredded cheeses I had in the fridge. and I just LOVE cottage cheese, so instead of half cottage, half ricotta, I just used all cottage cheese. I loved it very much and will make again :-)

Easy Four Cheese Lasagna
These was the best lasagna I have ever eaten. I used one can of sauce and only about 1cup of sauce from the 2nd can I bought. I followed the recipe exact except adding a layer of filling on top of each noodle which I made of cooked broccoli that I ran through the food processor to make sort of mashed, I also minced onion, green bell pepper and mushroom and stirred it into the broccoli mixture. It was the PERFECT blend of flavors and the most wonderful lasagna ever. Thank You Thank You Thank You.
