Banana Nut and Ginger Bread

I didn't notice any banana taste, but the overall taste was quite overpowering. It would be a good way to hide overripe bananas.

Tofu and Cheese Stuffed Shells

Good, not the best I've ever had. The cheese mixture filled 28 shells. I would make sure to really finely chop/grate the veggies next time: I used some pre-grated carrot that threw off the texture. I also used store-bought sauce in response to previous complaints. I added some chopped fresh parsley to the cheese mixture.

Lentil Quiche

this may be the best quiche i've ever had. the vegetables filled 2 9-inch crusts (not deep dish), but i needed a little extra egg and milk. i just threw tons of spices in there, like oregano, basil, parsley, rosemary, thyme, and sage. the lentils filled out the taste well.

Spicy African Yam Soup

it was very filling and tasted pretty good, but i think i would have liked it better without the salsa. ETA: ok, i have made this about 10 times now. it is now one of my favorite soups and a go-to recipe when i want an unusual soup. i use medium salsa, and blend about a third of the soup in the blender to even out the texture a bit. my roommate is obsessed with this stuff and would eat it every night if i'd make it that often.

Avocado Bruschetta

AMAZING. However, the topping isn't nearly enough for an entire baguette- I would double it. 1 baguette with enough topping would feed 4 or 5 people. I didn't use fresh basil, and I drizzled the olive oil instead of spraying.

These were delicious, but by no means did each batch yield 30 cookies. I used a small cookie cutter, and rolled pretty thin. They're better rolled thicker, anyway.

Mmmm. I doubled the spices (including adding another bay leaf) and substituted 6 cups veggie broth and 2 cups chicken broth for the water, and it hit the spot.

Morning Glory Muffins II

Changes: Went for half whole wheat flour, half white, split the oil with applesauce, and threw in some shredded zucchini, flax seed, and soy protein for good measure. Replaced sugar with Splenda for baking. Also made 12, not 18 muffins. I used pre-shredded carrots, but I think I would have been better off shredding them myself- it threw off the texture a bit. Slightly undercooked in the middle of the bigger ones, but that's my fault. They are delish, and I imagine they're pretty good for you with my modifications.

Banana Waffles

Sliced the bananas and mixed them all into the batter, along with some blueberries. I highly suggest topping fruit pancakes/waffles with fat-free fruit yogurt (let the waffle cool down a bit so the yogurt doesn't get warm).

Pork Chop and Feta Skillet

WOW. I can't stand pork, and I used a really cheap piece of meat, but this looked so good I had to try some. Sauteed some onions first in some olive oil, then covered the pork in lemon juice plus a bit of soy sauce, really rubbed all the spices possible on the pork, cooked, sauteed some basil, tomato, and garlic plus the onion, topped it all on the pork plus some feta. MMMMMMM. This is a combo with the other pork/feta recipe on the site, with some alterations.

Sweet Potato Biscuits

mmm, i'm eating it right now. i used margerine instead of shortening and added a little extra baking powder (to help it rise, after reading the reviews), about a half tablespoon of brown sugar, some cinnimon, allspice, and nutmeg. i microwaved the sweet potato for 10 minutes after poking holes in it and wrapping it in a damp paper towel to soften it. i give it 4 stars because the flavor is still not fantastic, and i don't think it would have been very good at all without the additions. note: make sure you add milk slowly. i didn't use the full 1/4 cup, and that's probably why some people have trouble getting their biscuits light and fluffy. add milk until everything just sticks together.

Tuna Fish Salad

Very good. It was just a little on the salty side, but I think that may have been because I added too much parsley. I also added a hard boiled egg white and omitted the onion. 1/4 cup of mayo was perfect, and made just enough for 2 sandwiches.

Viva Madrid Spanish Chicken

This really does take a while. I wish I had chopped everything the night before and cooked the sauce at the same time as the chicken. It would have been nice to have a large pan, as I had to cook each chicken breast individually. I thickened the sauce by mixing 2 tbs corn starch with 4 tbs cold water, then mixing it with the sauce. That worked well. I also used half chicken broth and half white wine instead of chicken stock. The sauce really wasn't impressive, for all the work it took. I would leave out the bacon. It was OK, not great by any means. I would make it again if it didn't take over 2 hours to prepare.

Spiced Turkey Roast

This was AMAZING. My mother literally cried, it was so good. She claims it's the best turkey she's ever had, and and I'd have to agree. I used a 3 lb. turkey breast (the recipe calls for 1.5 lb.), and cooked uncovered at 350 F for an hour and a half. I doubled the sauce and spices, but ended up with too much of those. It came out perfect- absolutely moist and cooked through. I poured the juices over the final product. In terms of the cranberry sauce: I would really recommend increasing the brown sugar significantly- not as good for you, but the sauce was way too bitter without it.
