Quick and Savory Tuna Burgers

Very tasty. Used 1/2 cup green onions and a mix of celery and green pepper and a bit of fresh cilantro. Didn't have any horseradish so used a teensy bit of chopped jalapeno. Held together nicely and had a little heat. Will do it again. I think the basic recipe can be modified to personal taste. It is lighter than many of the other fish cakes I have made.

Hasty Chocolate Pudding

Yum! a real keeper for those nights when you need a little rich chocolate. Almost as easy as instant but MUCH tastier. I like it warm too, as does hubby.

Jiffy Cinnamon Rolls

This was a fabulous recipe. I have been making something similar for years but this one is especially delicious. I have always just cut and put them on a cookie tray, but the idea of a muffin tin and putting a bit of filling in the tin gives a specially delicious crust, much tastier than simply putting on a cookie sheet! I substituted oil for some of the butter and added chopped walnuts and a wee bit less salt. This is a 5 and a keeper! Will not go back to my old recipe again. Thank you!

Eggplant Delight

Loved it. I went with less oil, though I dunked the eggplant slices quickly in Greek dressing, and sprinkled some breadcrumbs mixed with oil on top. Shook some garlic powder on top. I served it with leftover rice (fried) and my hubby scraped the bottom of the eggplant dish. Very nice and as an extra benefit -- it is fast as well!
