About this Cook
I am a wife and Mother of one. I am currently in nursing school. I have traveled around the world and America. I recently returned from Africa where I spent six months with my family.
My favorite things to cook
I love trying new recipes. I usually try at least one new recipe each week. I enjoy working with spices.
My cooking triumphs
Every time my family or guests say it is delicious. I just love that.
My cooking tragedies
When I was in a foreign country and bought a ready made HOT curry mix. It said "add mix." Well, I failed to look further up where it gave the amount (3 tsp). I added the whole packet. HOT HOT HOT!!!! Chicken had to get rinsed under running water to be edible. Oops. (No, I was not thinking)

Chewiest Brownies
Yummy!!! For a perfect top and chewy inside, use 1/2 cup of cocoa and 1 1/2 cups of sugar, and follow the rest of the recipe exactly. I love the flaky top. It cracks beautifully with your fork and has a moist chewy inside. I have made this 4 times already. Absolutely delicious.

Garlic Chicken Fried Chicken
If you want to make this absolutely delicious then omit the flour. The breading is much more flavorful without the flour and it adheres to the chicken better. Amazing taste!!!

Spinach and Rice (Spanakorizo)
This was so delicious. I only added 1 large onion and 1 1/2 lbs of fresh spinach. Followed the rest exactly by the recipe. I also used fresh lemon and feta cheese after plating. The rice took quite a bit longer to cook, so next time I will try to cook the rice first and then add it to the spinach mixture. Will definetely make this again. Yummy!!
