Easy Garden Green Beans

I didn't have fresh garlic and was a little nervous about the white wine vinegar. So after steaming the green beans for approx 7 minutes...I tossed in olive oil and garlic sea salt, topped with shredded parmesian cheese. Awesome!

Ice Cream Sandwich Desserts

I make this throughout the summer, with just a little modification (still using a 13x9 glass dish). One layer of each in this order... lite ice cream sandwiches, complete 16oz jar of hot fudge topping (microwaved for just less than a minute), salted peanuts chopped, 12oz lite cool-whip thawed, and a sprinking of more peanuts.

Baked Zucchini Chips

My husband and I love these! I add extra parmesian cheese, garlic powder, and top with herb goat cheese after pulling out of the oven. YUMMY!! I also bake a few minutes longer just to give a little crispiness.

Jamie's Cranberry Spinach Salad

This is awesome! I made a couple changes based on other reviews, mainly to save on time. Toasted sliced almonds (purchased in the bulk section of the grocery store) in the toaster oven, bag of baby spinach, 6oz Craisins, forgot the sesame seeds, and used Newman's Balsamic Vinaigrette. Very yummy!!!

Banana Cream Pie I

This recipe is awesome! The only change I made was to not bake. Otherwise, prepare as is, refrigerate, and top with Cool Whip (lite). Just remember to bake the pie crust before starting the pudding allowing time to cool. I always forget, and it adds time to what should be a quick and easy process.

Mint Buttercream Frosting With Dark Chocolate Glaze

Wow! This frosting was so good! I made to go on a batch of 8x8 brownies, cutting back a little on the amount of ingredients. I skipped the chocolate glaze and drizzled chocolate syrup instead.

Black Bean Spinach Pizza

This is a wonderful pizza! I use Newmans Own Chunky Hot Salsa, but omit cilantro (not a fan of the flavor), and the garlic because I forgot it the first time and didn't miss it, so one less this to chop. Mine takes 15-20min to bake, but all in all a five star pizza!

Golden Rum Cake

WOOOOW! Followed cake and rum glaze to the "T"! Poked holes in the cake after cooling for ten minutes as recommended by others, and then poured rum glaze over. Allow to soak in and transfer to a plate. I made a glaze with approx one cup of powdered sugar, couple tablespoons of water, tablespoon of rum, drop of almond extract, and enough corn syrup to thicken and harden when drizzled onto cake. Yummy!!!

Broiled Tilapia Parmesan

I normally find Tilapia just ok, and have never found a recipe that wowed me. Well... this was amazing and gets a WOW! The coating is so good and the dish is so easy. I added bread crumbs as suggested, and sprinkled the fish with a Parmesian Herb seasoning that I found in my spice cabinet, really yummy. Otherwise, kept the recipe as is. This one is a keeper!

Frosted Banana Bars

These are sooo good! This is the banana cake recipe I have been craving. I used light sour cream, three bananas (based on other suggestions), baked in a 9x13 glass dish for approx 40 minutes (started checking at 30 minutes), and topped with the Whipped Cream Cream Cheese Frosting from this website as suggested (used 1/3 less fat cream cheese). And of course, refrigerate. Made this again last night for the second week in a row, at hubby's request (who isn't a banana person!).

Baked Teriyaki Chicken

Great recipe! I omitted the ginger (personal preference) and used dried minced garlic as a time saver. If this effected the flavor, I didn't notice, it's already on next week's menu. I made this with a macaroni salad because it was leftover, but next time I'm serving with rice because the sauce is so good.

Marinade for Chicken

This marinade was good, easy, AND inexpensive! Just as Jillypooh said, they are ingredients most people have on hand. I did change the serving size to 8, and it was just about perfect for six boneless chicken breasts that I cut in half for quicker grilling time. I will definitely be using this marinade again. Oh, and I did marinate overnight.

Southwestern Egg Rolls

Love the flavor of this recipe! I double all ingredients and prepare exactly by the recipe up until step 5. I still use tortillas and warm in the microwave, but once I fill... I eat. Although I love fried food, I try to stay away from it when cooking at home. And even though I know some people baked, I just can't wait that long. These are so good I want to eat right away.
