Colleen's Slow Cooker Jambalaya

Great. I live in VT so it seems that things cook a bit faster up in the mountains so the chix was a little dry but everything else was solid. I like kick so I added 2 tablespoons of Old Bay Spice and 4 cloves of sliced garlic. Also used 1/2 a green and 1/2 yellow pepper honestly just because only had 1/2 a green one in the house.

Bacon-Roasted Chicken with Potatoes

Everything about this dish was great. We would have given it five stars but the bacon never crisped really. Next time I might crisp the bacon first or as others suggested just use the bacon on top. WE also didn't have abodo seasoning. Didn't matter. We both cleaned our plates. Suggested green side: Cajun Asparagus.

Mesquite Grilled Pork Chops with Apple Salsa

I gave this three stars which was an average between the two dishes 1 star for salsa 5 stars for the pork. Salsa way too much pepper/spice against the cool applesauce. Just didn't work. I'd stick to just plain applesauce or some apple chutney for a side with this dish. The pork was awesome with some small modifications. I added rubbed in some Tobasco Chipolte along with some garlic salt, salt/pepper and let set two hours before grilling. We also soaked the mesquite chips in some IPA! We served with a side of beer braised carrots and gnocchi tater tots - a recipe from Top Chef Winner Michael Vittaggio -

Shrimp Stir-Fry

This was good, not amazing, but good for a weekday dinner, that was easy and quick. We didn't have any peanuts so we used crunchy peanut butter which actually worked out well with the sauce. For two of us we used 2 tablespoons of PB.

Key West Penne

This was super easy and awesome. My girlfriend and I had another couple over, served with homemade Caesar Salad, & breadsticks this was a winner. We left out the olives as they didn't seem to go and used half & half for the cream. We also used mozerrella cheese (not a ton) and grated parm. Will make this again for the parental units when they visit!

Apple Cake IV

This actually was the first cake I've ever made and it turned out awesome! Living in VT in the fall it is hard not to pick up some apples but how many can you eat. This made for a great dessert with friends for game night. I used macintosh & granny smith apples and covered the top with walnuts.

Bone-In Ham Cooked in Beer

As a first time Christmas Dinner host to 15 people and a lover of beer I had to give this recipe a go! Absolutely without a doubt the most delicious ham ever! I basted every hour and used Otter Creek Copper Ale (you can find in New England primarily) as it's a robust ale and is perfect to drink while cooking! Fabulous, I will never forget this Christmas!
