Marketing Director for a southern VT ski resort. Live with my beautiful wife Mary and our Dory dog pooch. We enjoy sharing the cooking load where normally I cook on my days off where I can prepare and she tackles the 30 min meals.
My favorite things to cook
Seafood, pork, BBQ. We love sushi but in VT tough to find fresh fish and we haven't given it a go yet but will. Enjoy grilling and am an amateur home brewer. Cooking with beer is a favorite.
My favorite family cooking traditions
Deviled eggs & macaroni salads in the summer time. My Nana made amazing macaroni salad & my mother was a deviled eggs fan. I grew up in very American environment where meat & potatoes were king.
My cooking triumphs
Cooking BBQ seafood for my first date with my future wife while having a severely sprained ankle and post concussion!
My cooking tragedies
First attempt at brewing beer! Beer came out great but the wort boiled over and made our kitchen a sticky mess.

Colleen's Slow Cooker Jambalaya
Great. I live in VT so it seems that things cook a bit faster up in the mountains so the chix was a little dry but everything else was solid. I like kick so I added 2 tablespoons of Old Bay Spice and 4 cloves of sliced garlic. Also used 1/2 a green and 1/2 yellow pepper honestly just because only had 1/2 a green one in the house.

Bacon-Roasted Chicken with Potatoes
Everything about this dish was great. We would have given it five stars but the bacon never crisped really. Next time I might crisp the bacon first or as others suggested just use the bacon on top. WE also didn't have abodo seasoning. Didn't matter. We both cleaned our plates. Suggested green side: Cajun Asparagus.

Superfast Asparagus
Very good and easy. I added some garlic salt but the top came off and made it a bit to salty but still very tasty.
