Beef Tips and Noodles

Great easy tasty recipe. I used 16 oz. fresh mushrooms and had about 1.5 lbs. beef sirloin. Put it on low all day in crockpot.

Jalapeno Hummus

This is so good! I can't stop eating it! I doubled the recipe and it made about 2 cups. I rinsed the beans. Per other reviews, I added fresh cilantro. I also didn't have curry (and don't care much for it) so I left that out. I love that this doesn't call for olive oil. It's really good the next day when the flavors sit.

Rice Pudding

After reading all the reviews, I used 2 cups of milk and 1 1/4 cup rice. I cooked it for 1 hour. It was perfect. I also sprinkled cinnamon on the top.

Greek Pasta Salad with Shrimp, Tomatoes, Zucchini, Peppers, and Feta

Excellent! I took everybody's advice and left out the shrimp and doubled the veggies. I also broiled the onion with the zucchini and pepper. It was a hit!

Vegetable Pasta Salad

Great! The dressing does make the salad. I made it for a party so I left the ham out and added a chopped red pepper instead. I can see how the ham would be good in it though. Will definitely make it again!

Quick Brown Rice and Mushroom Pilaf

Great recipe! My grocery store was out of Minute Brown Rice so I bought Success Boil-in-Bag, cut open 2 bags, and simmered for 10 minutes. Went well with my grilled kabobs.

Tri-Color Chopped Salad with Pine Nuts and Parmesan Cheese

Excellent! I could not find just arugula so I substituted a pre-washed blend of arugula & baby spinach (by Organic Girl) and it was great. I let the dressing "sit" for a bit on the lettuces and it was perfect. I served this at a dinner party and it was a big hit. I will definitely make again.

Busy Day Chicken Rice Casserole

I changed a few things about this recipe due to others' comments. I used cream of chicken w/herbs & broccoli cheese soups. Instead of mushrooms, I added 2 cups of frozen broccoli florets. I used 1 cup of brown rice (make sure it's parboiled) so I increased the water to 2 cups (well, I used chicken broth). All I did was sprinkle salt & pepper on the SIX chicken breasts and I baked it at 350 for 1 hour. It was great!

Tiramisu II

I, as well, have never made tiramisu and am not much of a baker, so I was nervous to serve it at an Italian-themed Christmas party. It was great. It was easy to make and I served it about 24 hours after I made it. I doubled the coffee but kept the 2 T. of liquor (I used brandy). I also sprinkled cocoa after the first layer. This one is a winner. Thanks!
