Chicken or Turkey Tetrazzini

Excellent way to use up leftover Thanksgiving turkey. I add a can of mushrooms and use a combination of cheddar/american cheese. Can also use Cream of Chicken soup. This one's a saver.

Soft Christmas Cookies

Very easy and basic. My boys enjoyed rolling it out and cutting shapes. If you roll them thick and DON'T OVERBAKE, they stay nice and soft. Good recipe!

Lemon Rosemary Salmon

One of the easiest ways to fix salmon. It stays moist and the citrus is a nice flavor. We've tried it with oranges, too, and it was just as yummy. Very good recipe.

T's Sweet Potato Fries

A new favorite at our house, and even my 5 and 3 yr olds love them. I nuked my potatoes for 3-5 minutes and then let them cool before cutting them. We've made them several times and varied the spices. Great recipe!

All Day Macaroni and Cheese

Easy Slow Cooker Ham

This is now the only way I will ever cook a ham again! Make sure to get a smallish ham - say 8-10 lbs at the most. I cut mine into several large chunks in order to get it into the slow cooker. I didn'st measure the apple cider - just poured it in until it nearly reached the top. Made it for Christmas dinner, then we enjoyed the moist leftovers (but not for long - they went fast!) Every Christmas dinner should be THIS EASY!

Strawberry-Mango Mesclun Salad

Very sweet and yummy with the fresh fruit. We used a bag of mixed greens and ommitted the onion. It was great and we will make this again.

Maple Salmon

Very easy to put together and it looked and tasted fabulous! My hubby commented that next time we should double the sauce/marinade mixture and marinate it longer or baste as it bakes. Very good maple flavor and moist.

Oatmeal Banana Raisin Coconut Cookies

This is like banana bread in a cookie shape! For my family, it is the perfect blend of crispy and soft. The house smelled SOOOO GOOD while they were baking. Will definitately be making these again!

Lentil and Sausage Soup

This soup had an awesome flavor! I ommitted the carrots for the sake of time, and it also only took an hour for the lentils to get tender. Next time I make this (and there WILL be a next time) I will add some spinach towards the end.

Make Ahead Breakfast Casserole

OH, man! I took this to a mom's group, and had to bring the recipe to the next meeting! The addition of spinach is awesome. Very easy and the best tasting breakfast casserole that I've eaten.

Penne Pasta with Spinach and Bacon

My husband actually cooked this one for us. It was so good that even my picky 2 yr old ate it. We added grated parm cheese, and next time will add a splash of white wine or lemon juice while it simmers. Great way to get kids to eat spinach!

I did everything to the letter, and the ladies at church LOVED it. I did thaw the strawberries just a bit in the microwave so that I could break them up more. Great recipe!

Steak N Gravy

The only exception I had was no ground bay leaves on hand, so I used 1 Tbsp of Italian Seasonings and 1 Tbsp of Oregano. It was very tender and made a great gravy - just needed a sprinkling of salt. We will enjoy this again.

Almond Mandarin Salad

I used a combination of italian mix and baby field greens mix (bagged), and ommitted the dry hot mustard and the bacon. I also toasted the almonds in 1 Tblsp butter and then sprinkled white sugar on them while they cooled. The salad was GONE, and my dinner guests asked for the recipe before leaving. Great recipe, thanks!

Stuffed Shells I

The only thing I changed was to add 1 lb of cooked and crumbled italian sausage. This is definitely a keeper - ky picky toddler/preschooler both loved it and asked for more.
