Tomato-Cream Sauce for Pasta

Reviewed: Mar. 29, 2011
This sauce is really good. I did double the recipe just for quantity sake. I also only used 1/2 small onion and 3 cloves garlic. Just because we prefer garlic flavor over onion in our sauce. **Just a note: To those who state the sauce is too thin, you probably didn't allow the sauce from the canned tomatoes to reduce. You must bring it to a high boil and then reduce the heat to allow the liquid to boil off and thicken. Also, this isn't meant to be a low fat recipe. If you substitute heavy cream for milk or even half and half plan on adding flour to your base otherwise you will not have the same thickness.

Maple Salmon

Reviewed: Mar. 1, 2011
Wow! This salmon is awesome. Normally I hate fish but made this way it is delicious. My 2 and 4 year olds also ate it right up. Definitely add fresh ginger to help give it that little bit extra "oomph" and help offset the sweetness of the syrup. I'm adding this to my regular menu. Thanks!

Pizza Dough I

Reviewed: Feb. 28, 2011
I don't understand the high rating on this at all. I followed exactly and it tastes like school pizza. If you want pizza crust you're better off buying one in your local grocery store isle than using this recipe. I had high hopes for this but sad to say it was not good at all.

Blueberry Zucchini Bread

Reviewed: Mar. 10, 2010
I personally prefer this recipe over the traditional zucchini bread since I love blueberries. Sweet without being too sweet. I've saved this one and I make it several times a year and it freezes well.

Chicken Enchiladas II

Reviewed: Mar. 10, 2010
Yummy and different take on traditional enchiladas. Definitely season your chicken first though. My whole family loved this meal and it's become a weeknight staple.

Guacamole

Reviewed: Mar. 10, 2010
Bland. Didn't care for this much at all. I think it was lacking something but I couldn't put my finger on it. I prefer the rotel guac recipe much more.

Marinated Baked Pork Chops

Reviewed: Mar. 10, 2010
This sauce was ok. I won't make it again. I think it was the wosteshire sauce that overpowered it. My 1 and 3 yr olds loved it though. So maybe I'd make it again for them. Nothing special.

Curried Coconut Chicken

Reviewed: Feb. 25, 2010
Good recipe! But to all those that are stating this is an Indian curry, you are mistaken. This is a carribbean or island curry. Completely different, but still good int their own ways. Just had to put that out there!

Awesome Slow Cooker Pot Roast

Reviewed: Jul. 10, 2008
All I can say is my old pot roast recipe is going in the trash! This one is so much better. Make with a side of smashed potatoes and you have a great southern home cooked meal. Who needs Cracker Barrel?

Chicken Makhani (Indian Butter Chicken)

This is great! My husband's parents are from India and I made this for them. Even though this is a North India recipe (they're from S. India) they like it a lot. Very authentic. Easy too.

Honey Baked Chicken II

This is really good! One of my hubbies favs! I substitute chicken thighs w/ skin instead of the breasts b/c I just prefer dark meat. Make a little extra sauce and serve over rice. Yummy!

Eggless Sweet Potato Casserole

Reviewed: Jul. 10, 2008
This is the best! I've taken this dish to so many parties and everytime I get a handful of people begging me for the recipe! I orignally tried this out b/c my BIL is allergic to eggs, but I found that you don't miss them at all. The only thing I changed is I eliminate the orange juice simply b/c I don't prefer the citrus taste (kinda over powering). Other than that I keep everything the same and it's fantastic!

Fresh Southern Peach Cobbler

Reviewed: Jul. 10, 2008
This was ok. I thought the topping would be more of a crunchy crumble but it was actually cake like. Also, am I the only one who had way too much cinnamon/sugar on the top? I even baked it for an extra 10 minutes to try to make it crunchier but it was still a tad mushy. A little too much sugar, even for my sweet tooth. Kinda overpowers the peaches.

Boilermaker Tailgate Chili

Reviewed: Nov. 3, 2007
I never used to like chili until I tried this recipe! Great! I changed it up slightly by using 1 jalepeno pepper instead of the green chilis. To balance out the heat, I eliminated the hot sauce. I topped it off with cheddar jack cheese and sour cream...yum! This is a keeper!

Apple Crumble Pie

Reviewed: Dec. 27, 2005
This is a great recipe, but I did change a few things to "help" it out. First, I used 3/4 brown sugar and 1/4 white sugar for the apples. I added lots of cinnamon and nutmeg plus some vanilla. For the crumb topping I used brown sugar only instead of white. I also added a little bit more cinnamon to the top. I took the pie to a gathering last night and it was the first dessert to be scooped up! Everybody raved about how good it was!
