Chicken Stew with Dumplings

Better than good...this turned out GREAT! I used what was left of a roasted chicken, boiled the carcass (with bay leaves, carrots, onions and celery) the night before and skimmed fat off the next day. Strained to remove bones, added rest of chicken, sliced carrots, peas, a spoonful of better than bouillon and since I didn't have potatoes I added some frozen corn and green beans. Dried parsley instead of fresh..AMAZING! Just wished I'd made a bigger batch!

Buffalo Chicken Chili

This won a recipe contest? It definitely doesn't need salt added to taste. Too acidic and salty (possibly due to the Frank's since this had the same effect on another dish I made with allrecipes). It's still sitting in the fridge and no one wants to eat it.

Raspberry and Almond Shortbread Thumbprints

I wouldn't add more flour, as this made the dough really difficult to shape into balls despite chilling as well as possibly causing the cookie to taste like pie crust made with shortening. Use a good quality jam.

Buckeye Balls II

I think this recipe is good, but it was more work than I had anticipated. Definitely make the balls on the small side and work the dough by hand. I have a commercial mixer and it was too soft even after chilling the dough.

Cheesy Buffalo Chicken Dip

This could have been much better but in fairness I modified my dish according to some advice I read in the comments. I used 2 cans of chicken (12.5 oz each) and the ranch dip powdered packet with sour cream. It was way too salty for my taste. Next time, I'll use less cream cheese, more chicken and more hot sauce. I'd probably skip the ranch dip and go for the dressing in moderation. I'll be trying this again, either way!

Red Lentil Curry

Awesome! I made a few substitutions and it may be less authentically Indian, but still so delicious we couldn't stop eating it! Didn't have curry paste on hand, so added 1/8 tsp of cayenne, 1T of minced garlic and powdered ginger. Chopped up 3 Roma tomatoes and used approx 2.5 cups of organic roasted red pepper tomato soup. Great suggestion rinsing lentils first and simmering them for 8 min leaves them a little bit firm, but just right (especially for reheating). In the end I added a handful of golden raisins! Thanks for posting this recipe!

Tuna Snack Spread

Doubled the recipe, used 2 cans of tuna for each package of Neufchatel cheese (instead of cream cheese). Also, used 2t. onion powder and 1 tsp. of onion salt and 6 drops of Tapatio. Excellent! Served with multigrain tortilla chips from Costco! Yummy!

Easy Meatloaf

This recipe turned out pretty good. I did add Worcestershire sauce and doubled up on the ketchup & mustard (but not the sugar). I didn't have bread crumbs so I used a package of stove top stuffing! I'll definitely make this again and next time I'll saute the onions. Thanks!

Carrot Oatmeal Muffins

Just made these and with a few alterations. Extremely delicious, moist with bits of crunch. I also reduced both sugars to 1/2 cup each, doubled the coconut, soaked raisins in warm water and threw in 1/4 c. walnuts and 1t. vanilla and cinnamon. I omitted the cream cheese (didn't have any) and instead of oats I used a 1/4 c. flax seeds. Also substituted 3/4 c. unsweetened applesauce for oil. Then to spice them up, I used a cinnamon glaze made with powdered sugar (from another allecipes.com recipe). I know it's a lot of substitutions, but they are awesome!

Grandma Ople's Apple Pie

My brother made this recipe for Thanksgiving and it tasted as good as our Grandmother's recipe! The top crust was a little different but the filling, crust texture, flavor, everything was superb! I could eat it cold or hot!! This was our first Thanksgiving without our Grandma and this pie brought back a lot of good memories for my family!
