Fruited Curry Chicken Salad

Yum. To make it healthier, I use 1/2 cup greek yogurt, 1/4 cup light mayo. Also, I sub craisins for both the raisins and grapes. Toasted walnuts work well, too. Recently, I added a bunch of cooked quinoa and mixed it all together to create a one-dish meal. Endless possibilities!

Slow-Cooker Chicken Tortilla Soup

Made this a gazillion times. I like to sub hominy for the corn and use tortilla chips to save time. DELICIOUS!

Great basic recipe but next time I MUST add goodies (nuts, dried fruit, chips, etc.) or drizzle w/ chocolate. Otherwise too plain. Used vanilla and almond extracts instead of anise (used more than recipe called for)

Crunchy Oven Fried Tilapia

family loved it. i used all whole-wheat flour (they couldn't taste any difference, and i felt better about making it even more healthy!) also, i flipped the fish after 15 mins (also gave the baking sheet another quick spray of pam) and baked for another 5 to 10 mins (check after 5 mins for doneness)

Honey Wheat Muffins

A great recipe, but I changed it to suit my tastes a bit: I applesauce instead of oil (same 1/4 cup), 50% whole wheat flour & 50% regular flour, 1/2 banana (mashed) instead of egg, and added a bit more baking powder, and finely chopped a little more lemon zest - gave it good flavor. only prob is it's a little too moist--tinker with it, but otherwise YUMMY AND FAT-FREE!!!!

perfect iced coffee on the go. i like it a bit stronger, so i add more instant coffee. but my only complaint is that it only makes about half as much as i want!

everyone seemed to be using a narrower pan or doubling the recipe, so i did the same, but this probably detracted from the original meaning: bars. what i got was a (delicious) cake bite, not a bar. so, as a cake bite, four stars!

Spiced Applesauce Bread

Only used about 1 tbsp of oil and made up for the rest in more applesauce. Added more nutmeg and cinnamon, and a little less sugar. Came out great. Try sprinkling coarse brown sugar on top before baking. Good recipe!

Banana Crumb Muffins

I made two mini muffin loaves instead (no muffin pan!), so I baked it a bit longer and they came out gorgeous and delicious. I substituted 1/3 cup applesauce for the butter, and used two bananas instead of three. This gave it a rich flavor that wasn't overpowering with banana. Keep the crumb recipe as is, but add more cinnamon if you love it like I do. GREAT recipe, thanks!

Bread Pudding II

Deeeelicious (eating it right now!) I've made this a few times and have found the melted butter/margarine unnecessary and I cut down on the egg. I omit raisins and by doing all of this, the excellent flavor is all still there!!

Honey Syrup

Perfect for French toast or pancakes here in Spain, where you just can't find maple syrup! A couple times I've just used honey and lime sorbet and zapped it in the microwave--same thing. Yum.
