I stopped cooking for awhile as I have developed so many food problems. I cannot have sugar or yeast so that has limited me a bit here and there. I miss BREAD! I have just started to cook again. I was having a lot of trouble doing it because it seemed everything I wanted to cook, or recipies I was attracted to were ones I couldn't eat. I have gotten beyond that now. I have managed to find some recipes at the library that I am actually able to eat. We moved to a house with a dream of a kitchen so I am back at it again....at last!
Applesauce Cocoa Cookies
I loved this recipe once I tweaked to suit me. I made two batches: one as written and one in which I substituted 1/3 St. Joseph's Maltitol Sweetner and reduced the water to about a Tablespoon or two. In comparing the two, the one with the St. Joseph's was sweeter and I thought, a better tasting cookie. The original recipie produced a cookie that was more bitter in taste.
