Classic Reuben Sandwich

I love this classic sandwich. It is very delicious, which is odd because I don't like sauerkraut, Thousand Island dressing or rye bread. But all together I guess it's a masterpiece. I also like to mix one part Thousand Island and one part spicy Russian dressing for the sauce.

Joey's Peanut Butter Cookies

This is an awesome recipe for peanut butter cookies. I followed the recipe exactly, except I added some milk chocolate chips to half the batch. The batter does look a little runny, but after you add the flour, it's firm enough to roll into balls. OH YEAH, only leave the cookies in the oven for about 8 minutes, then take them out and let them rest on the sheet for a few minutes before you take them off to cool them. They may not look all the way done, but trust me, they will be! If you bake them any longer (like I did with the first two batches I baked) they come out a little hard and dry (but still good with a glass of milk!)

Easy Pork and Sauerkraut

My mom makes a pork and sauerkraut dish that I was looking for when I found this recipe, and this one was even better! I followed the recipe almost exactly... but my pork loin was over 2 lbs, so I doubled everything except for the apple. I also added about a tsp of caraway seeds. I didn't cube the roast either, I just cut two long slits lengthwise and stuffed them with sauerkraut, then broke broke the roast up as it cooked. Excellent meal, and it was exactly what we were looking for on a cold day!

Salmon Cakes II

I followed the suggestions of other reviewers and used 2 eggs, Parmesan cheese and about onion powder instead of onions. I also added some garlic powder for good measure. These were delicious! I really liked the Parmesan, although you might want to use the Cheddar to get kids to eat them.

Shrimp Scampi

Super fast, super yummy recipe for quick shrimp scampi! Great way to save time and money versus going out for dinner, without much compromise on taste... I used chk broth instead of wine (had none on hand) and upped the garlic for personal preference. My boyfriend and I both loved it. Definitely making it's way into the dinner rotation... Oh, BTW, several of the negative reviews of this recipe mention altering the amt of lemon juice, which isn't in the recipe... maybe they reviewed the wrong one?

Amy's Healthy Fruity

MMMMMM! What a tasty and healthy way to get in your servings of fruit! I like to pre-assemble the ingredients the night before and make this for breakfast. Like most reviewers, I've left the soy powder out, and it's still great. I've also used blackberries instead of blueberries, and altered the ingredients due to the amount I've had on hand. Easy to make and worth a try! BTW for those that are interested, a 6" banana has 0g fat, 24g carbs, 1g protein and about 90 calories.

Deep-Dish Blackberry Pie

MMMMMM! This recipe was spectacular! I'd been searching for a recipe for blackberry cobbler, and was having no luck until I came across this one. I doubled the crust ingredients and made a bottom and top crust. Next time I also may double the blackberry filling. Still the best recipe yet I've found for a delicious blackberry cobbler (or pie)!

Angel Lush with Pineapple

Excellent recipe! I don't care much for pineapple, and this was still good! I made it for my brother (who loves pineapple), but the whole family loved it. Couldn't find a good selection of fresh berries, so I thawed some frozen raspberries and sprinkled some sugar on them while they thawed. I also put some of the raspberries on every layer over the pineapple mixture. I'm not sure why, but my cake didn't come out nearly as pretty as the one in the picture. The pineapple mixture ran out from between the layers, and even though it wasn't beautiful, it still tasted great!

Marshmallow Treats

Great basic recipe for krispy bars! You can add in anything you want, or change the cereal to chocolate or fruity krispies... This recipe in a 9x13 pan makes bars less than an inch thick. If you're wanting really thick bars, a 9x13 pan could easily hold a double recipe.

Baked Salmon II

I thought this was an absolutely awesome marinade/cooking liquid for the salmon. It is perfectly subtle, as it gives a definite flavor to the fish, without completely masking it. Super easy (had all the ingredients on hand) and even my two year old loved it. Will definitely make again!

Slow Cooker Taco Soup

This was an awesome recipe!!!! I only used one can of beans (the hot kind), drained the corn, and used 1 1/2 packets of taco seasoning. I also used canned tomatoes packed with garlic. I didn't add any extra water because we like our soup thick. I topped it with cheddar/jack mix shredded cheese, sour cream, chopped raw onion, chopped serrano peppers, sliced avocado and hot tortilla chips! Delicious! The only thing I will change is to only use 1 can of tomatoes next time.

Slow Cooker Beef Stew I

I followed Corinne's modifications as I saw it would lend more flavor to the original recipe, and it was great! I used 2 cups beef broth and next time I will up it to 2 1/2 - 3 cups so the stew is a little more saucy (love to soak up the sauce with some crusty bread). This beef stew really hit the spot now that the weather's cooling off. My hubbie loved it too.

Twice Baked Potatoes

These potatoes were great, way better than the ones you get in restaurants! I left out the red pepper and mushroom due to personal preference. They take some time to make, but they are worth it!

Spicy Grilled Shrimp

This is a very good and simple recipe for shrimp. I'm pretty sure the amount of coarse salt called for is to aid in crushing the garlic into a paste. The abrasive sharp edges of the salt help grind it up (thank you FoodNetwork), and I've never had to actually use a whole tablespoon. If you skip the grinding part and just mince the garlic, you could just add salt to taste.

Caramel Frosting I

This frosting is great!! My grandma used to make blackberry jam cake with caramel icing, and this tastes just like it. About some comments from other viewers, this icing is not a soft spreadable kind like you might be looking for, but don't let that scare you away. It sets up fast and my grandma just poured it over the cake still in the pan. I'd imagine it would be very good on carrot cake (which I'm not a fan of) or any other cake that could stay in the pan, just make sure the cake and pan are completely cooled first.
