Zucchini Herb Casserole

Reviewed: Jul. 31, 2012
I love this recipe! I upped the amount of rice to 3/4 cup, cooked in 1-1/2 cups of water. I also left out the oregano, and used two tbs of fresh basil, and 2 tbs fresh parsley. Everybody raved! I cooked it alongside some baked chicken, seasoned with salt, pepper and rosemary.

Turkey Pot Pie

Reviewed: Dec. 23, 2009
I make this about once a month using chicken. It's very good! I substitute boxed chicken stock for the bouillon and water. I put a lot less oregano, and I use fresh parsley. I cheat and use a Pillsbury crust, too.

Grilled Pork Chops with Fresh Nectarine Salsa

Reviewed: Aug. 18, 2009
This got rave reviews at my house. The chops were moist and very flavorful. I loved the salsa! We don't like cilantro in my house, so I added fresh parsley instead. This was a wonderfully easy dish to make. I served it with steamed asparagus and rice pilaf. It's definitely going into the rotation!

Turkey Pot Pie I

Reviewed: Dec. 30, 2008
This was very good. The two men in my house raved! Instead of leftover turkey, I used chicken. I had boiled a whole chicken, and used half the meat for the pie. Instead of boullion, I used the chicken stock I just made, so I needed to add more salt. I thought there was too much oregano, so next time I'll use a little less, and add some poultry seasoning. And I should have added peas! It was very easy because I used Pillsbury pie crusts.

Corn and Zucchini Melody

Reviewed: Dec. 26, 2008
I made this for the first time on Christmas day. I doubled the recipe to serve ten. The only change I made was to add salt. It was a huge hit! I barely had any leftovers. Even the picky ones ate some. I will make this recipe again, for sure. I like the idea of adding tomatoes, and garlic, or adding Italian or Mexican seasonings to accompany those kinds of entrees.

Chicken and Broccoli Alfredo

Reviewed: Sep. 20, 2008
I made this last night with a few tweaks. I added 1/2 diced onion, one clove of garlic, minced, and some sliced fresh mushrooms to the saute of the chicken, as well as salt and pepper. I used Cream of Chicken with Herbs soup. I also added 1/2 cup of shredded mozzarella at the end, and some chopped fresh parsley. It was awesome! My family loved it.

Salisbury Steak

Reviewed: Feb. 8, 2007
It was very good! You need to double the sauce though, to have enough for gravy for mashed potatoes. I loved how tender the patties were.

Burrito Pie

Reviewed: Mar. 15, 2006
This was very good and easy to make. I spiced it up some by adding cumin, chili powder, and salt and pepper to the meat. Next time I will serve it with lettuce and tomatoes or pico de gallo, maybe some sour cream. Infinitely "doctorable."
