Chicken and Pumpkin Goulash

This was a delicious meal. My entire family enjoyed. This recipe was outside the box for us...I've never prepared a pumpkin dish, and so I was skeptical. My 16, 14 and 8 year olds had seconds, not to mention hubby. I did things a little differently: I put the boneless dark meat in the crock for about 3 hours before I added the rest b/c a friend was bringing me the tomatoes and pumpkin and hadn't arrived yet. Then I followed others suggestions and added a little less cinnamon and some garlic powder. Also, I didn't have coriander and I halved to olive oil. I chopped approx. 5 roma tomatoes since I didn't have canned and we live where some sort of green pumpkin/squash (calabasa) is sold in chunks, so I used that instead of orange pumpkin. The mixture wasn't really soupy, so no need for the cornstarch addition. I just spooned the mixture into bowls and served with bread on the side. I would say this recipe could be thrown in the crock in any way, and it wouldn't matter...it would still be delicious in the end. This is a keeper for us.

Easy Indian Butter Chicken

very good. I didn't have tandoori masala, but thanks to another reviewer I mixed 1/2t garlic powder, 1/8t ginger, lime zest,a dash of curry, 1/2t chili powder & 1/8t garam masala together as a tandoori masala substitution. Per other reviewers I cooked chicken on stove top ahead of time, added some asparagus broccoli, lighten it by using evaporated milk and 1/4 c butter. Accidently bought tomato paste instead of sauce. Definitely thickened up quicker. Will try sauce next time as a comparison. Wasn't spicy enough for my taste, but for my family of 5 it was perfect. Will make again.

Creamy Au Gratin Potatoes

I quadrupled this recipe and added ham to make as a main dish. I put about a teaspoon of garlic powder in the sauce and used mozarella instead of cheddar because cheddar isn't available in the Andes Mts. I also sprinkled onion powder over each potato layer instead of fresh onion - to make it more appealing to my children. Very delicious.

Scottish Shortbread II

The recipe is good and easy. I baked these for my British neighbors with rave reviews. The helpful advice I followed from the reviewers: I baked these at 300 degrees for 30 min, I mixed the ingredients by hand, sprinkled w/sugar after baking and cut once they had cooled a bit.

Butter Cream Frosting II

This recipe is just right! I made a few changes b/c of the ingredients I had on hand - all butter instead of butter/shortening and heavy whipping cream instead of milk. Will use this recipe for frosting from now on.

Baked Potato Soup I

This was SO yummy. I was even able to get my children to eat some. However the fat content doesn't lend itself to a frequently made recipe. Worth keeping on hand for special occasions.

Creme Brulee French Toast

This recipe was a hit with my family. Great to serve to our overnight guests as well. However I did modify. First, omited the alcohol. Also, I dipped each slice of bread plus a few extra in the egg mixture and baked immediately. This really cut back on the french toast being soggy.

Florentine Artichoke Dip

Tasted good but the consistency was too thick - I tried adding some sour cream and it helped a little. If I were to make again, I would omit a bar of the cream cheese and add sour cream and more mayo instead.
