Zippy Egg Casserole

Very good! I eliminated the croutons and added my favorite veggie, zucchini, along with some green pepper. I didn't have any dry mustard so I used a tad of regular mustard (a trick my mom taught me a long time ago) Instead of layering, I mixed everything together and threw it in the pan. So my dish was more like "Zippy Baked Omelette." Pepper jack cheese is a great addition to this recipe. Thanks!

Red Velvet Cake V

When I saw that this recipe didn't call for vinegar, I should have known to just keep looking for another recipe. But I gave this one a try. Not too terribly disappointing, but I have to agree with the review that calls this cake a butter cake. Red velvet cakes are dense (thanks to the vinegar) and moist. This cake was buttery with no density and the flavor of a butter cake, not a chocolate cake, which is really what red velvet cake is.

Seafood And Cabbage Salad

Not only is this a great dish, it's very healthy! I always add shrimp with the crab. One of these days I will try real crabmeat. I'm sure that one will be even better.

Oven Baked Jambalaya

Very tasty. Despite having very mushy rice, this dish was a hit at my Christmas Open House. Next time I will cook the rice separately and add at the end. Also, the Creole Seasonings Blend absolutely rocks! I used extra.

Shrimp Verde

I loved this! A great meal for Atkins dieters. Because I love garlic and onion, I used extra garlic and lots of green onion. As a result, my shrimp were very tasty. Good with or without the parmesan-- I personally like it without.

Grandma's Famous Salmon Cakes

I'm on the Atkins Diet and this is a perfect meal for anyone who is doing the low-carb, high-protein thing. Therefore, adding flour is not an option, and in my opinion totally unnecessary. The mixture may seem a little loose at first but if the salmon is drained well and the mixture well-blended, they should come out perfectly (as mine did on the first try). The only additions I made were garlic powder and chopped green onion. Very tasty!

Vinaigrette

Very tasty and right up my alley since I absolutely love garlic. Since I'm watching fat and calories, I used two packs of Equal instead of sugar, and Enova salad/cooking oil. Turned out great, thanks!

Good Old Fashioned Pancakes

Delicious! I'm sure sifting is the key to making them light and fluffy. I also recommend using a bit more sugar and adding vanilla or whatever flavoring suits your taste. Like many other said, I will never use box mixes again.
