Baked Pineapple with Tapioca

This was very easy to make. I made it in a 9 inch pie dish, which was too big, so the pie came out like a pancake. I should have tried a small loaf pan. It also came out very moist - I think I should have cooked it longer. I'll make this again, because it does have a very nice taste when warm. Might try it with some shredded coconut on top...

Tangy Chicken

So tasty and easy, too. I didn't have Russian dressing, so I used Thousand Island instead. The chicken turned out very moist. I used the remaining sauce over rice pilaf and served dinner with sweet corn. My picky husband ate it which merits a rave review. I only gave it 4 stars because my kids thought it had too much onion and my 3 year old wouldn't eat it at all. Next time, I'll cut down on the onion soup mix.

Party Kielbasa

I've tried this twice - great! The first time I used pork kielbasa and served it over couscous. Yesterday, I made it with turkey kielbasa straight up. Awesome.

Baked Bean Sandwiches

I never thought anything so simple could take so good! This is a keeper - will be making this over and over again. I used Bush's vegetarian beans and skipped the bacon. It was fabulous. Thanks for this recipe.

Kielbasa with Peppers and Potatoes

Well - Success! Need I say more.. I've made this twice so far and my picky eater husband ate and ate.. This is a winner in my family book. So easy to make. I used Yukon Gold potatoes and vegetable oil, with onion and minced garlic. I did have a problem with potatoes sticking to the pan, but will use another reviewer's suggestion next time and try a non-stick pan. I also tried another reviewer's suggestion and used frozen peppers which tasted great. Thanks for a wonderful recipe.
