Orange Cilantro Rice

This one really didn't work out for us. It was OK - nothing special. Just tasted like rice and orange juice. Probably will never make it again.

Grilled Eggplant, Tomato and Goat Cheese

Wow! Delicious, easy, and healthy. All of my favorite things! I made this as a side dish instead of an appetizer, and my whole family gobbled it up. Didn't need to use the toothpicks and everything held together with no problem. This would be a good vegetarian alternative if you're hosting a cookout. A couple of them could make a meal.

Butternut Squash Pizzas with Rosemary

Made this with Jay's Signature Pizza Crust from this site. I'm a huge fan of roasted squash and onions, so I expected this to dazzle me more than it did. But I still liked it a lot. I preferred the onion taste to the squash on this, surprisingly. I will probably make it again as a nice alternative to a regular pizza.

Gyros Burgers

These were great! Used all ground beef since I couldn't find ground lamb at my market. A nice change from the usual burger. Next time I'll try to make a tzatziki sauce.

Slow Cooker Lentil and Ham Soup

This recipe was perfect as I was looking for a way to use up the leftover Easter ham and I've been on a bit of a lentil kick lately. I omitted the celery and used a full can of tomato paste instead of the tomato sauce. Also about doubled the ham just to use it up. Absolutely delicious. The ham lent a nice smoky taste, and the lentils made it nice and hearty. Looking forward to my next ham dinner so I can make this with the leftovers!

These were a huge hit! I'm too lazy to stack everything up, so I just mixed all of the ingredients together (except the bread), using diced corned beef and shredded cheese. Then I dropped a tablespoon or so on each slice of bread and broiled. Easy and delicious! They also tasted good at room temperature, so you can make them ahead if you want.
