Creamy Potato Leek Soup II

Great, easy recipe. Followed the advice of a couple reviewers and added 2 cloves of garlic to the leeks while sauteing. We love spicy foods, so I chopped up a red jalapeno and sauteed that as well! Using a potato masher right in the pan, I lightly mashed the potatoes - loved the consistency. When we reheated this for left overs, we added some diced chicken to it -- WOW! A meal in a bowl. This is a very flexible recipe!

Rhubarb Blueberry Muffins

These were really moist and tasty! I followed the advice of some of the previous reviewers and added an additional 1/2 tsp of Baking Powder, and a sugar/butter/cinnamon crumble topping. Will definitely making these again!

Ten Minute Enchilada Sauce

I really enjoyed this recipe. As someone who has never liked any canned enchilada sauce, I was quite surprised how easy this was to make and how good it tasted! I will be making enchiladas a lot more often now!

Curry Kabobs

Monkey Bread III

I made this recipe this morning -- halving the ingredients, but still placing in a bundt pan. I had to put in for an additional 15 minutes, and I'm still not convinced the middle was completely done. But the taste was wonderful -- and I will definitely make again (just allow for more baking time!)

Banana Oat Muffins

Wow! I didn't have buttermilk, so did the typical milk/lemon juice substitution. I made half the recipe in muffin tin and the other half in a loaf pan. I froze the loaf - and when we ate it two weeks later it was even more moist and tasty! I think I'll freeze the entire batch next time!

Fresh Asparagus Risotto
