Chocolate Mint Cookies I

Absolutely wonderful! I crushed up some candy canes and sprinkled them over the mints while they were setting up. One hint: If you have multiple types of cookies you're baking at once, bake a batch while the dough is setting up in the fridge. This worked out well for me.

Deep Dish Brownies

These are great. I now have 2 brownie recipes from this site that are standards in my kitchen (the other is the Best Brownies recipe). I like to add either a cup of semi-sweet choc chips or peanut butter chips to this recipe. I've never had any problem with the texture, but I guess it depends on what you're used to/looking for. These rise during baking and stay somewhat airy after cooling. Definitely moist and delicious.

St. Patrick's Day Zucchini-Oatmeal Cookies

I love these cookies. I used 1 cup chocolate chips and 1 cup peanut butter chips, and they reminded me of no-bake cookies with that change (in the way they taste). I also use all oats and no granola, as one other reviewer mentioned. I also add a little wheat germ, and nutmeg in addition to the cinnamon. Be prepared to share, because they are tasty, and because this recipe makes a lot!

Melt - In - Your - Mouth Shortbread

I might go so far as to call these heavenly! It's true, they melt in your mouth. I followed the advice of others and creamed the butter alone for 10 minutes, and then after adding the other ingredients, beat the whole mixture for several minutes more. I also added about 2 tsp almond flavoring after adding the powdered sugar (this is a good time to taste the mixture to see if it's where you want it). I used an OXO dough baller to shape the cookies, and they didnt't spread much. Great alone, or with a thumbprint filled with preserves or a Hershey's kiss. They look like velvet when they come out of the oven!
