Vegetarian Kale Soup

We are not vegan or even vegetarian but I've read Eat to Live, Eat for Health, You on a Diet, The China Study, and Prevent and Reverse Heart Disease. They all recommend a vegan life style so I decided to give a few recipes a try. This was my first choice and a great one. Even my meat and potato loving husband liked the soup and heated and ate a bowl of the left overs for his lunch today before I got home. My only change was I added an 8 oz can of low sodium V-8 juice as I let it simmer too fast and too much of the liquid evaporated. That solved the problem and it was fantastic. Definitely a repeat.

Homesteader Cornbread

This is my favorite corn bread recipe. I've been making it for about 4 years now and decided it was time to rate it. Since there are only 2 of us, I cut the recipe to 1/3 and bake it in my small cast iron skillet which makes a nice crust on the bottom no matter what recipe you use, but this one is Excellent!

Zucchini Cornbread Casserole

The zucchini is abundant right now so this was a nice way to use some of it. I didn't have 8 ounces of any one cheese so I put cheddar in the mix and a 4 cheese blend on top after I had baked it for 45 minutes. I used a 9x9 glass cake pan which worked very well. I had fried cabbage II also from this site and grilled pork chops which made a nice combo. I would make both recipes again.

Pecan Pie Bars I

This was good, but not as good as pecan pie. I was disappointed in the crust. It was too thick and "flourey" tasting. The filling was nice. Made it for a club meeting in my home. There was a lot left over. The ladies much preferred the pumpkin cream cheese dessert from this site.

Pumpkin Cream Cheese Dessert

I served this, plus 2 other desserts from this site, to my club ladies yesterday. This was by far their favorite. Got lots of compliments. I was just glad there were two pieces left so that my husband and I could try it. We liked it as well. Since I was making so many desserts all at once, I was thankful for the ease in which this went together.

Quinoa and Black Beans

We are not vegetarians, but are trying to eat healthier. Bought my first box of quinoa three weeks ago and have had pilaf twice which we liked. Today I made a 1/2 recipe of Quinoa and Black Beans for lunch. Served it with corn bread and a side of tomatoes. Enjoyed it very much. Will not be my last time to make this for lunch. Next time I will make the full recipe so I will have some left over.

Baked Dijon Salmon

My husband was beginning to feel like a guinea pig with all the new recipes that I've tried lately. He usually just eats and says nothing, but after a couple bites of baked dijon salmon, he said,"you can make this again!" Great way to cook salmon. Easy enough for every day, elegant enough for company.

Cheesy Ham and Asparagus Bake

This casserole was the main entree for a brunch that I served to a ladies group in April. I host this group once or twice a year and usually have a lot of food left over, but not this time as most had seconds and several asked for the recipe. It was super easy to assemble and as there was no last minute preparations, I could enjoy my guest during the baking and resting time. I will definitely serve this again for one of my brunches.

Donna's Chocolate Zucchini Bread

Best Chocolate Zucchini bread I've made. I have pledged to make 25 loaves of bread for our church's booth at the local festival so I tried this recipe out on my Ladies Circle first. They all thought it was great as did my family so part of my 25 loves will now be made from this recipe. I'm sure there will be some very happy people out there who are fortunate enough to buy my bread.
