Slow Cooker Ham

This was a huge hit! It was the easiest ham I've ever prepared, and the tastiest too. Juicy and tender... yum! It's the only way I'll cook ham, from now on. Thanks for a great recipe.

Roquefort Pear Salad

Oven Fries

This will be my go-to fry recipe from now on. I did use olive oil instead of vegetable oil, and baked for a total of 45 minutes at 450 because my husband likes the fries nice and brown. I sprayed the cookie sheet before spreading the fries to reduce sticking, and had no problems. I turned them after 15 minutes and again after 30 minutes. This recipe could have so many variations. As others have suggested, I will try sprinkling them with Parmesan cheese after baking, or using onions or garlic or other seasoning to spice it up a bit. Thanks for a keeper recipe.

Risotto with Tomato, Corn and Basil

This is a nice risotto, on the sweet side thanks to the wonderful addition of corn. I din't peel the tomato, just seeded and chopped it and added it in for the last few minutes. Next time I'll try substituting chicken broth for the water for a little more savory taste. Be sure to allow more cooking time than the recipe suggests; it took me about 50 minutes from start to finish. Don't add the liquid too quickly or cook it over very high heat to try to speed up the absorption of the liquid; risotto always takes a while, but it's worth it!

Avocado Feta Salsa

Wonderful! I had an old recipe for this bread which I conveniently lost... this one is so much better! The bread stays moist and flavorful for 2 or 3 days. This does take all day to make, however, so start it early in the day... or be prepared to stay up late at night! But it's definitely worth the effort. Thanks!

Potato Clam Chowder

Excellent and easy; a definite keeper. The only thing I changed was that I used leftover cooked, cubed potatoes; I browned them with the onions and it was very tasty. I reduced the overall cooking time since the potatoes were already cooked. My only problem is that with 3 grown men to feed, there were no leftovers! This would serve 6 as a soup course, but as a main course (served with crusty bread and a salad) I wouldn't plan on getting more than 4 servings.

Mom's Potato Latkes

Excellent, and just like my Mom's. She made these frequently during Lent as a side dish with salmon patties and stewed tomatoes. I was missing Mom last night and craving this meal, and I was very happy with how the latkes turned out. I layered the shredded potatoes with paper towels in a large bowl to absorb the excess moisture, which worked well. Thanks for a great recipe, one that I'll make for years.

Rosemary Roasted Turkey

I've tried several methods for roasting turkey over the years (cooking bags, rubbing with butter or oil, using different herbs and seasonings) but this was by far the best. My search for the perfect Thanksgiving turkey recipe is over. Everyone at the table loved it. Thank you!

Butternut Squash with Onions and Pecans

Amazingly easy, impressively tasty. Even my semi-picky son loved it. I've made it twice now, and the only thing I've done differently (based on other reviews) was to add a little brown sugar and vanilla. I'll be making this often. Thanks for a great recipe.

Chicken Thigh Fricassee with Mushrooms and Rosemary

I made this exactly as written and it was fabulous! I did use skinless/boneless thighs because they're easy and the recipe didn't specify. The meat was cooked through at 40 minutes. I will definitely make this one again... thanks for a great recipe!

World's Best Potato Salad

By far, the best potato salad I've ever had. I used a few suggestions from other reviewers: Doubled the corn starch to 2 tsp, used 1 tsp ground mustard instead of prepared, and added 1 tsp celery seed. This dressing is amazing. The recipe made lots of dressing; next time, I will throw in a few extra potatoes so that I can have leftovers. (Or, I can hope for leftovers!) Thanks!

White Bean Chicken Chili

Oh man, this is so good! I've scrapped my old beef chili recipe; this is the only one I need. The only changes I made were suggested by other reviewers. I used good-quality salsa verde and fire-roasted tomatoes; one can of corn, drained; and two cans of white beans, drained. Served with shredded cheddar and sour cream, with fresh cornbread on the side. Perfect for these cold winter's days! Thank you!

Connie's Zucchini "Crab" Cakes

These are amazing! I didn't have Old Bay so I made some (very easy to do) using a recipe I found on the internet. After I shredded the zucchini, I placed it in a colander and lightly salted it, then let it sit for a half hour or so. After that, I squeezed a ton of water out of the zucchini, then followed the recipe as written. I did take one other reviewer's suggestion and baked these instead of frying. 425 degrees for 12 minutes, flip, then bake another 12 minutes. (Don't dredge in flour if you're going to bake these. I did, and it didn't help them to brown as it would if I'd fried the cakes.)

Pesto Chicken Penne Casserole

This is good stuff! But it makes a LOT. I just put about 2/3 of the recipe in a 9x13 pan, and froze an 8x8 to have on hand during the hectic holidays. I make this exactly as written, with two small changes: I only use half of the pesto; and I mix everything except for the noodles in a big bowl. Once the noodles are divided between the two casseroles, I pour a portion of the sauce/chicken mixture over top and mix right in the casserole. Thanks for a keeper recipe!

Key Lime Cookies I

This is a great summer cookie recipe. I used key lime juice (easier than squeezing those itty bitty limes!) and the taste was a nice combination of sweet and tart. Don't worry if the dough is "sticky." I didn't try to roll them into balls, but just dropped them onto the cookie sheet using a teaspoon. They shaped up nicely as they baked. These are nice, soft cookies that will travel to a 4th of July picnic tonight. Thanks!

Tantalizing Turkey and Blue Cheese Meatballs

The whole family loved these. Very, very tasty (and I'm not a big ground turkey fan). The only change I made was to use two whole eggs instead of separating the eggs. And the only complaint from my family was that I didn't make enough! UPDATE 3/12/14: I used this recipe for turkey burgers and it was fabulous. Very tasty, moist burgers. I made guacamole to top the turkey burgers and it was excellent. Thanks again for a recipe I keep coming back to, again and again!
