About this Cook
Have a lot of folks to feed. Don't enjoy cooking as much as I used to because I'm so busy, but love quick "keeper" recipes to feed a large family.

My mom was a great cook. I have such pleasant memories of times around the dinner table with the TV off. I hope I can create these for my family too.
My cooking triumphs
My husband's stepdad gave the okay for us to date/marry after he tasted some of my cooking - I think it was a cheesecake or lasagne.
My cooking tragedies
I worked at a Mexican restaurant in my early twenties. I let the water boil out of the double boilers and the queso got burnt. Not a great night!

Spicy Eggplant
My daughters and I really enjoyed this. I added some of the extra ingredients like ginger, diced onions, Sriracha hot chili sauce, green peppers, rice vinegar, and more sesame oil. It was great and I'm getting ready to make another batch to eat for lunch this week. Great with rice.

Cabbage Patch Stew
We love this recipe. Have made it numerous times since finding it last year. It always turns out well even with substitutions. Great way to use up cabbage. I like this recipe so much better than a regular beef soup as it has a lot of flavor. We've also substituted sausage for the beef and that was great too.
