Pub-Style Vegetarian Chili

VERY good! I left out the mushrooms because I did not have any. I used one can of diced tomatoes, 1 can of rotel tomatoes, and a shiraz for the wine. I reduced the water to 1 cup and added a can of tomato sauce. I also added about a teaspoon of coco powder during the simmer. I did increase the chili powder by 2 tsp because we like spice. Served over brown rice. This smelled fantastic while cooking!

Spoon Rolls

Great recipe. Fast, easy, and tasty hot rolls. I only refrigerated a couple of hours before baking a small batch and they came out great. I refrigerated the extra batter for 2 days before baking another batch and there was no difference in the quality between the 2 batches. So you do not HAVE to wait overnight if you are pressed for time.

Mom's Turkey Sausage Patties

This was very good! I made a double batch and used half for baked scotch eggs. The other half kept in the fridge for several days so I could form and make sausage patties as needed. The texture is a bit firmer than pork sausage but I liked that. I would be sure to use 85/15 ground turkey and not ground turkey breast or the sausage will be very dry.

Fast and Easy Pancakes

This is not what I would consider a pancake. I would have given 5 stars had the name been something more like what you get, such as a breakfast crepe. That being said I really loved these once I got over my panckae expectation. They are thin, sweet, and chewy. I am going to keep these stocked in the freezer for a quick breakfast. All they need is a smear of butter, nutella, or peanut butter. Roll it up and munch. If you want light and fluffy pancakes this is not the recipe for it, but you should try them for breakfast or dessert crepes.

Easy Oatmeal Muffins

Exactly what I was looking for! Just a nice, plain, and easy muffin recipe with a very slightly dense, tender, and fluffy texture and slightly sweet. I used maple and brown sugar instant oatmeal since I had it on hand, and added 1/2 tsp cinnamon and 1/4 tsp nutmeg. The instant oatmeal probably made them a little sweeter than the plain oatmeal would have, but they are perfect for my husband to grab as quick breakfast on his way out the door in the mornings. He is used to store bought muffins so expects them to be a bit on the sweet side. These are good warm out of the oven, but the texture is much better when completely cooled.

Homemade Wine

I made this from grape juice using the amount of yeast called for, and after 6 weeks it was still very yeasty in smell and flavor. After a few more weeks it had mellowed and is very tasty now, though extremely potent. I did 2 more batches using apple juice, 1 cup sugar, and 1 tsp of yeast for a 96 ounce jug of juice. I am trying it for the first time after 6 weeks, and it is really very good. A little dry,barely sweet, and a beautiful color. Not quite as potent as the grape but I prefer that. Thanks for the recipe! I am having such fun playing with this, and it will make nice Christmas gifts. If I have any left by then.

Sicilian Ricotta Cheesecake

Very nice recipe. I used home made ricotta, 5 eggs, and lemon zest. I did not have any orange zest, so I added a tablespoon of orange juice to the batter. I also used crushed shortbread cookies mixed with a little butter to make a bottom crust and topped the whole thing with a fresh blueberry sauce. This is a new family favorite.

Avocado Shrimp Ceviche-Estillo Sarita

I have tried several other ceviche recipes but never one that called for ketchup and worcestershire before. It intimidated me at first but I am very glad I tried this. This is now my favorite. I had to use lemon since I was out of limes but other than that I followed the recipe. The time stated to marinate the shrimp both before and after adding the onion, tomato, and cilantro is more than sufficient for cooking the shrimp perfectly. I think that maybe others who feel that the shrimp was not cooked were expecting it to turn bright pink like it would if you cooked it with heat. It will not. Marinating it longer will just give you rubbery overcooked shrinp. Once it is opaque and pink around the edges it is cooked.

Ann's Dirty Rice

Thank you for a wonderful and simple recipe. My husband always bought the box mix which I never really cared for. I have been saved from any more box mixes! I made this as is the 1st time and it was great. I have another pot simmering now that I spiced up with cayenne, garlic, tomato boullion, and a can of kidney beans. I have used jasmine rice both times because that is what I have right now. That is the true beauty of this recipe, you can easily play with it.

D's Famous Salsa

A wonderful recipe. I had to tweak a bit since I was missing some ingredients. I used 1 can of no salt diced tomatoes, and 4 diced roma tomatoes. A whole onion since we love onion, and 1 tbls of garlic. I also had to use lemon since I had no lime, 1 jalepeno, 1 serano half seeded, and a splash of prepared habanero hot sauce. Once blended my husband still thought it needed something, so I added a pinch each of dark red chili powder, green chili powder, and cumin. I can't wait to try the recipe as is, but even with my variations this is fantastic.

Baked Tortilla Chips

I just made a batch of these using whole grain tortillas and seasoned with plain sea salt. Once cooled, they are crisp and wonderful - just in time for my super bowl get together. I will be using this recipe from now on with both corn and flour tortillas.

Best Bread Machine Bread

By far, the best loaf of bread I have ever made in my machine. This recipe is a great basic. Fantastic as is, and can be easily "dressed up". I added rosemary, thyme, and garlic with the flour and salt and had a fantastic bread for pasta and grilled sandwiches. The texture of this bread is simply amazing.

Mexican Whole Wheat Flour Tortillas

I have never tried to make tortillas before so I started this expecting it to fail (at least for the first few tries). Well, they came out perfectly! The recipe was very easy, and it did not take long at all to knead. I used a blend of olive oil and canolla oil instead of shortening, and used a tortilla press instead of rolling out the dough. My boyfriend said they were better than his Grandmother's! What a compliment. I did have to use almost 2 cups of water to get a smooth dough, but I was expecting to have to play with the recipe a bit. This will be something I will be making often, no more store bought tortillas for this house!

Amazingly Good Eggnog

I have never tried eggnog before, but my boyfriend likes it. He always just buys some from the store then spikes it at home. I figured if he liked store bought then homemade HAD to be better. I am SO GLAD I chose this recipe! The boyfriend LOVED it, and I like it as well. The only changes I made from the original is that I strained it 4 times instead of 1, and I used 2 cups of Crown Royal instead of rum. It is VERY rich and so creamy. I will be making another batch for my New Years Eve party.
