Creamy Cheesecake

I did as several reviewers suggested and beat the mixture for 10 - 15 minutes, also baked it in a water bath. It was very good, but personally, I didn't see much of a flavor or texture difference between this and a no-bake cheesecake.

Chile Colorado

Great chili recipe - especially for low carbers. I used stew meat, didn't dredge it in flour or brown it, and threw it into the crock pot with the pureed chili's and all of the soaking liquid. I added a little garlic and cumin. Served with black beans on the side for those that wanted along with cheese, sour cream, and some chopped raw onion. Definetely will make again.

Chili-Lime Chicken Kabobs

Great flavor. It was raining the day I made these, so rather than thread them on skewers, I just fried up the pieces of chicken in a non-stick skillet. Can't wait to try this on the grill.

Blackened Chicken

Great chicken recipe. My only problem was that it needed a lot longer in the oven to get completely done. Next time I will pound the chicken breast flat so that there is more surface area for the blackened seasoning and it will cook faster.

Seven Layer Salad

I really like this salad - adding parmesan to the basic 7 layer salad adds great flavor. Unfortunately, I'm the only one in my house who likes this - more for me to eat I guess!

Roasted Sweet Potatoes & Onions

This is not like your usual candied sweet potatoes. The amaretto does help to make the potatoes sweeter, but it does not get overly sweet, as most candied sweet potatoe recipes do. Very different and easy. This one is a winner.

Persian Kabob

I gave this 4 out of 5 stars simply because I wasn't sure what to do after marinating the meat - do I grill it with the yogurt dripping off, do I wipe off the yogurt, do I rinse off the yogurt? I was unsure and rinsed off the yogurt. The meat was very tender, and there was a slight tang to it from the yogurt. I would make this again.

Brandy Flamed Peppercorn Steak

Excellent recipe when you're looking for something special. My steaks had a thick pepper crust which was a little much, so I would use less pepper next time. Also remember to stand back when you light the brandy! Even with way too much pepper (which could have been my fault), I still give it 5 stars.

Down Home Baked Beans

I made this for the 4th and cut the sugar down to 3/4 cup - still very sweet. These were very good, but nothing spectacular - I expected more "zip" from the chili sauce, but all I could taste was sweet. I would cut the sugar even more next time.

Vanilla Ice Cream IX

Very good ice cream. I did have trouble with beating the eggs and sugar "until stiff." Mine never got stiff even after 8 minutes of beating. It is probably my fault since I used Splenda and egg beaters. Ice cream was still very good. I also went with just 1 tsp of lemon and replaced the rest with vanilla - still very lemony. Makes a huge batch.

Fruity Bundt Cake

I baked my cake for 1 hour and 10 minutes, and the outside was very dry - I think I must have hit a banana when I tested it at an hour. Even so, it was a fantastic cake - with all the fruit, it would be great for brunch. Will definetely make it again.

Cuban Shredded Pork

I thought this was "ok." The flavor was good (with plenty of lime), and I liked the onions and garlic in it. Seemed to work best in tortillas along with black beans, cheese, ect...

Antipasto Squares

I used the pillsbury canned pizza dough instead of crescent rolls - also spread a thin layer of tomatoe paste on the top of the bottom crust and then sprinkled italian seasoning. Great to take to work for lunch.
