This was a wonderful, healthy recipe... I even got my 3 and 10 year old to eat it!! I added a lot more cilantro because we love the herb, and I also added some halved snow peas, water chestnuts and halved some grape tomatoes... Gotta sneak those veggies in where you can!! I sauted the veggies with some garlic and stirred them into the recipe. I also added some Thai peanut sauce for extra flavor. It has a little spice to it, so if you're heat sensitive, leave it out. We'll have this recipe over and over again!!
