Apple Crisp

Fantastic! I used Earth Balance in place of butter and used only 2 tablespoons. Skipped the salt and subbed oat flour. It was delicious and I didn't even feel guilty eating it. I enjoy the flavor of the brown sugar over the white sugar some other recipes use.

Downeast Maine Pumpkin Bread

I prefer a spicier pumpkin bread. This recipe was moist and baked well but if I make it again I will definitely increase the spices.

Whole Wheat Blueberry Beet Muffins

Yum! These were delicious. Modifications of course :) In place of the sugar and the oil, I used around 3/4 cup of honey. For flour I used a mix of hard white wheat, spelt, barley, and brown rice. No blueberries around so I used dry cherries and a little extra water. I've been receiving beets in my weekly CSA package and I'm not particularly a fan. With an even bigger bunch this week I started looking for recipes and glad I found this one!

Brown Sugar Oatmeal Pancakes

Yum! Of course made modifications for my own purposes but this recipe is a keeper. For my all purpose flour I used a brown rice/spelt/barley mix. For the buttermilk I used 1 tbsp vinegar and 1 cup less the tablespoon of unsweetened almond/coconut milk. Also used old fashioned oats whole and they were fine.

Decadent Pumpkin Muffins

Yum! I made a few changes - cut about a third of the white sugar out, used a blend of brown rice, spelt, and barley in place of all purpose flour, and used two whole eggs instead of egg whites. I also forgot the raisins but the muffins were good even without.

Chocolate Chip Toffee Bars with Almonds

These bars are delicious! Very rich so all you need is a small piece. I had trouble with them sticking to the foil so next time I'll likely spray the foil.

Whole Wheat Honey Bread

I love this bread! It's worth a second try if the first run fails. I'm not sure if it's my conditions or my fresh milled flour (hard white wheat this time), but most recipes fail as written for me. In this case I added 2 tablespoons of vital wheat gluten and used only a cup of water. Also I used the basic/light crust setting. The taste was spot on. I need to tweak the water a little more as the sweet spot is somewhere between 1 c and 1 and 1/8th c for me, but I will be making again.

Belgian Molasses Bread

Very tasty bread, but I found I didn't like the combination with most of my usual sandwiches. I found myself using it mainly for toast or plain buttered bread. For that reason I may not make this bread again.

Traditional Style Vegan Shepherd's Pie

Delicious! I made some substitutions. I used Italian sausage imitation crumbles since the beef crumbles were out. Also not a vegan so I used normal mayo, milk, cheese, cream cheese. Oddly enough I'm not big on vegetables but this is a great way to prepare them.

Fiesta Fudge Cookies

I tried these with both the Hugs and the Mint Truffle kisses and I definitely like the Mint Truffle version better. Very good either way, though. Based on other reviews I will put the leftovers in the freezer. I put the kisses in tip down, waited until they melted a bit, and then spread them around a little with my finger. I may skip the cinnamon or cut back on that next time as the cookies have a strong cinnamon flavor to them.

Best Big, Fat, Chewy Chocolate Chip Cookie

A keeper! I chilled the dough for an hour and had flat cookies so I increased to two hours and baked slightly longer and the cookies weren't flat. Otherwise I followed the recipe as written.
