About this Cook
I live in Canada with my husband and almost 2 year old son. My husband is a pastor and I'm a stay at home mom, which I love, so I like to experiment with new meals because I have the time to do so.
My favorite things to cook
Things that challenge me. When I have just a few ingredients in the house, I like the challenge of coming up with something yummy.
My cooking triumphs
Cooking for the last few days vegetarian. My husband is a voracious carnivore, so having success with vegetarianism is great.
My cooking tragedies
One time when I was cooking with my mom, we put salt instead of sugar into the peanut blossoms we make for Christmas. They were not a big hit that year.

Hot Cheesy Spinach Dip
This was DELICIOUS. I was a little nervous about it because it seemed runny when it came out of the oven, but it turned out ok and everyone LOVED it. The dish came back to me empty. Thanks!

Penne with Spring Vegetables
This was delicious, but I made some tweaks to it. I felt it would be a little too bland with just the oil and parm cheese. I used cauliflower instead of snap peas ( I didn't have any on hand) and added shredded carrots, fresh chopped parsley and chopped scallions. My husband liked it and it's a keeper in our house.

Tomato Spinach and Bean Burrito
This is SO YUMMY. I also changed mine a bit and used fresh spinach, about 8 oz, and black beans. This would also be good with corn. This is also so versatile. I made it for dinner the other night and served it on rice for my young son, put it in a tortilla for my husband, and served it on top of greens, crushed tortilla chips, salsa and sour cream for myself. This is also a great chip dip with salsa and sour cream (and guac if you have it). I had that for dinner as leftovers a few nights later. Delicious, economical, and versatile! Thanks Lisa! I will be making this again.
