Braised Black Lentils

I was wandering the Organic section at the grocery store today looking for something healthy and came across Black Caviar Lentils. They looked interesting so I thought I'd try them. I got home and found this recipe for them. Who knew lentils could be tasty? I usually don't like lentils, but this recipe is good. I didn't use the butter (trying to make it healthier) and did not have fresh thyme. I used a palm-full of dried thyme instead. I also added a bit more bouillon for flavor because I did not have the Champagne vinegar. Will be adding this recipe to my recipe box. Thanks Chef John!

Really, Really Easy Chocolate Raspberry Mousse

I needed a gluten-free dessert for my Bible study group. They loved it so much they were scraping every last bit out of the glasses and have asked me to bring it again. Easy recipe, turned out great. I did make one change though. I used fresh raspberries instead of frozen and only had about 6 oz at that. It seemed like enough. I used Lindt Excellence 70% cocoa smooth dark chocolate bar for the chocolate. I served it in wine glasses and it was a really nice presentation.

Sweet Dinner Rolls

I made these for Thanksgiving dinner and they were a big hit. Nice flavor and texture. Will definitely make these again. I didn't make them by hand; I made the dough in my Bosch mixer and also used instant yeast, so they had to raise only once.

Caramel Apple Cranberry Pie

Made this for our church Thanksgiving pie social. It was not a hit. Even though it was labeled Caramel Cranberry Apple Pie, the cranberries looked like raisins, which does not look appetizing in an apple pie. (All the pies were cut up and served on plates). Also, because I sprinkled the cinnamon and sugar on the top crust as the directions say, the cinnamon made the pie look burnt or dirty. I think overall the flavor of the pie was fine, it was more aesthetic problems, and I made a pretty pie. I didn't make the lattice top, instead I cut out about 30-40 small maple leafs out of the dough and laid them on top in a pattern, leaving room for the filling to bubble up. I got lots of compliments on that. So, if you are going to make this pie, my biggest recommendation would be to add the extra cinnamon to the apples, not to the top crust. I would still sprinkle the sugar on the top, which is what I do to all of my covered fruit pies. I think the cinnamon on the top was the biggest issue, with the cranberries looking like raisins being the 2nd.. I personally think a regular apple pie is still better than a caramel cranberry apple ; I will be sticking to my go-to apple pie recipe from "The Joy Of Cooking."

Creamy Rice Pudding

Oh, my! This is SO good! Love the light creamy flavor. I followed a few other reviewers suggestions: I made sure my rice was cooked to tender before I added it to the milk/sugar mixture. For some reason, my rice took about 25 minutes to cook. I must have had the temp down too low. And, thank you to Shaz for the advice of adding a little rice mixture at a time to the egg and milk before adding it to the pot so it wouldn't come out as “egg-drop” rice. I did make 3 slight changes. First, I used Lactose-free 1% milk because of my dairy issues. It came out nice and creamy still. I used just a little less than the 1/3 cup of sugar just to cut back a little. I think it would be fine with the full 1/3 cup of sugar, but I personally don't like things very sweet. And, I didn't put the raisins in it because I am not overly fond of raisins. I will definitely make this recipe again. Thanks!

Chewy Chocolate Chip Oatmeal Cookies

I followed other reviewers suggestions and increased the flour to 1 3/4 cup and the baking soda to 1 tsp. With those changes, this is a 5 star recipe, but as written, only about a 4. Everyone LOVED these cookies. I used about 2 cups old-fashioned oats and 1 cup of quick-cooking oats as I didn't have enough quick-cooking oats. I've never had Beatrice'e Excellent Oatmeal cookies, but these reminded me of Great Harvest Bread Company's Oatmeal cookies which are absolutely fabulous (though their cookies do not have chocolate chips). Oh, and based upon personal preference, I did not add the walnuts. This recipe (with the changes) is a keeper!

Wild Rice Chowder

Good flavor, texture. Love the wild rice. Thanks! The only change I make is substituting lactose free milk for the cream since I am allergic to cream. Makes it not as thick of a chowder as the recipe calls for, but it works for me.

High Five Orange Rolls

Well, my review is rather mixed. I took these to a baby shower brunch and everyone raved over them so that would be 5 stars. But, though my husband and myself would give the rolls themselves 5 stars, the frosting we both thought was only 2-3 stars. I usually love cream cheese frosting, but I think it was too much competition (flavor-wise) with the orange extract. I will make these again, but will make up a different frosting, maybe more like the frosting on the orange rolls they make at the resort in my hometown.

Chocolate Mint Cookies I

My husband and friends really liked these. I followed the recipe exactly except I doubled the size of the cookies and I didn't put mint on top of all the cookies. Because they were larger, I melted a whole Andes mint on the top. On the other half of the cookies, instead of the mint, I spread melted white chocolate because not all of my company likes mint. The white chocolate cookies were the first to go, but the people that tried the mint ones really liked them.

Goat Cheese Stuffed Lamb Burgers

I was naughty and used ground beef instead, I'm not a big fan of lamb, but I thought it turned out great and my husband LOVED these burgers, he would give them a 5 star rating. After reading other reviews, I mixed the seasonings with the meat instead of the cheese and froze the goat cheese slightly first. Served with Tzatziki sauce. Wow, someone get me a breath mint! Thanks for the recipe

Fluffy Pancakes

Ok, but too sweet for me. I like syrup on my pancakes so I generally don't like the actual pancake to be sweet. I think I will try this recipe again and decrease the sugar.

Slow Cooker Mashed Potatoes

Amazing! No gravy needed with these potatoes. Fattening, but very very tasty! And the best part, is they are done ahead of time so there isn't the usual mad scramble to get the mashed potatoes on the table with the rest of the meal.

Perfect Cherry Pie

This recipe is a keeper. I made this pie as a gift and they loved it--couldn't say enough good about it. I did make a few changes but I am still going to give it 5 stars. I didn't have potato starch so I used corn starch; I didn't have shortening so I used 4 TB lard instead; and I used vanilla extract instead of almond extract based upon personal taste preference. Thanks for the recipe!

Grandma Johnson's Scones

Wow! The best scone I have ever had. I never really liked scones before but these are a keeper. I usually substitute the raisins for 2 cups of blueberries. They are a little hard to get the dough mixed with more berries than the recipe calls for, but they sure taste fantastic. The family absolutely loved them. I make a frosting of cream cheese, butter, powdered sugar, and several drops of milk for my husband to top them off with as he is a frosting lover

Pillow-Soft Dinner Rolls

Texture was great, but needs a little more sweetener. I substituted butter for the shortening and honey for the sugar because of my allergies. Made great sandwiches out of these rolls. Thanks, will definitely keep this recipe

Cajun Cabbage with Rice

Tastes great, was easy to make. I only gave it 4 stars though because it seemed a little odd , more like it should be the filling for something. I might try this again as filling for Stuffed Cabbage rolls.
