About this Cook
I am 31 years old, married to a wonderful man for 10 years. We have two Standard Poodles but no children yet. Hopefully, that will change in the next couple of years. My mother is a great cook, and I get my love of cooking from her. I have quite a few food allergies so I am learning to substitute ingredients or tailor a recipe to fit my needs.
My favorite things to cook
I love to bake, and make Italian food. I love making pies, breads, cinnamon rolls, homemade pasta sauces, and hearty soups. I love green salads and homemade salad dressings.
My favorite family cooking traditions
My mother is a great home-cooking style cook. She always made big Sunday dinners after church. We grew up with pizza, fried chicken, lasagna, tacos and enchilades with homemade flour tortillas. Growing up in Idaho, we always had huckleberries that we froze to use all winter long. My mom has always made Zucchini Huckleberry Bread that was given to her many years ago by a lady in our church. It is always a huge hit and people still ask for it. Also, my husband's grandmother taught me her old sweet roll recipe that she used when she ran a bakery out of her home in the 60's. People that have known her for many, many years still say that is the one thing they remember most about her. Her Caramel Rolls are fantastic!
My cooking triumphs
Lemon bars, apple pie, Chicken Parmigiana, Cinnamon rolls,Caramel Rolls, Huckleberry Zucchini Bread, Blueberry Coffee Cake, Strawberry Rhubarb Pie. My pies and rolls are probably the most requested items If I am asked to bring something for a group meal, it is usually one of those items.
My cooking tragedies
My husband and I have totally different taste buds. When I like my Spaghetti Sauce, he doesn't. When he likes it, I think it has no flavor. He hates onions, guacamole, and green peppers. I have had a few meals bomb because he doesn't like the onions in it.

French Onion Soup Gratinee
This recipe is fabulous. Thanks so much! I have just recently tried French Onion Soup and can't believe it took me over 30 years to try it, so I wanted a good recipe to make at home. My onions took about 45 minutes to cook and caramelize. I followed all directions and measurements except for one. I am allergic to molasses which is in Worcestershire sauce, so instead, I substituted 2 tsp of "Better Than Bouilon" beef soup base in place of the Worcestershire sauce. It worked great as a substitute. I also used an organic Balsamic Vinegar which is a lot purer. No caramel coloring or added nitrites. I am not a wine person so I was a little clueless as far as that goes. I used a Charles Shaw Cabernet Sauvignon. This recipe is a keeper!

Braised Black Lentils
I was wandering the Organic section at the grocery store today looking for something healthy and came across Black Caviar Lentils. They looked interesting so I thought I'd try them. I got home and found this recipe for them. Who knew lentils could be tasty? I usually don't like lentils, but this recipe is good. I didn't use the butter (trying to make it healthier) and did not have fresh thyme. I used a palm-full of dried thyme instead. I also added a bit more bouillon for flavor because I did not have the Champagne vinegar. Will be adding this recipe to my recipe box. Thanks Chef John!

Really, Really Easy Chocolate Raspberry Mousse
I needed a gluten-free dessert for my Bible study group. They loved it so much they were scraping every last bit out of the glasses and have asked me to bring it again. Easy recipe, turned out great. I did make one change though. I used fresh raspberries instead of frozen and only had about 6 oz at that. It seemed like enough. I used Lindt Excellence 70% cocoa smooth dark chocolate bar for the chocolate. I served it in wine glasses and it was a really nice presentation.
