Vegan Pancakes

Slow Cooker Chicken Taco Soup

This recipe ROCKS! I have made it twice already and love taking the left-overs for lunches. The shredded chicken makes it so hearty! And since most of the other ingredients are in cans, it is very simple to throw together before a busy day. Enjoy!

BBQ Pork for Sandwiches

This recipe is bone-head simple and SO delicious! I made this for Christmas dinner (along with a beef brisket and cheesy potatoes - yum!). My brother walked in my house and said, "It smells like pulled pork!" and then proceeded to sit down and eat seconds, thirds, fourths of it until all platters were empty. He wasn't the only one to get a second helping, either. And my aunt has asked me for "my" recipe. :) Slight changes: I use bullion & water instead of canned broth - because that is what we have on hand. I used a pork shoulder instead of ribs because it was what I found, and very affordable. And since I have neither a dutch oven or iron skillet, I simply put the meat on a baking tray when it comes to the oven step. I've made this recipe twice already with excellent results. Try it for yourself, you won't be disappointed!

Busy Day Barbeque Brisket

The flavor was delicious, but the meat was dry. I cooked it in the slow cooker for 9 hours but when it was served it needed a sauce or something to moisten it.

Peanut Butter and Banana Smoothie

This felt so good on my sore throat today. The recipe was just perfect. I agree you should use a frozen banana, to keep the drink cold. And if it is too thick for you, you can throw in a couple of ice cubes, like I did, to thin it down. Great recipe!

Cinnamon Rolls

These were very tasty - but I think they taste more like a donut than a typical cinnamon roll. Which is fine - they were very yummy - just not what I was expecting. I followed other's suggestions and added more cinnamon. I tried half of the batch with white sugar, the other half with brown. We liked the brown sugar better. One other thing I encountered while making these was the dough was REALLY sticky when I went to knead it. I kept adding handfuls of flour, because it wasn't very manageable. Also, it says this recipe is "Ready in: 40 Minutes" which just isn't true. Read through the directions thoroughly before you start these. They will take at least 1 hour and 45 minutes. These banana muffins are perfect in their simplicity.I like my muffins really moist, so I didn't measure the banana - I just used three (medium sized).They turned out great! My friends really liked them.

Quick and Easy Vegetable Soup

This is delicious! I found a recipe for a cajun spice mix online by Google-ing it. The only thing I changed was I made it in my crockpot, while I was away for the evening. Oh - and I used peas instead of greenbeans, but just because that was what I had on hand. It has very nice flavor. You should try this recipe. :)

Honey Banana Muffins

This is a good recipe. The muffins turn out moist and tasty. I didn't make any changes. The nutmeg complements the flavor of the honey nicely. Good for something different, but I wouldn't make my muffins this way every time.

Easy Chili

This recipe was a great jumping off point for chili to feed a hungry potluck croud. I omited the celery (seeing as I didn't have any on hand). Due to another review, I cut down on the water by one cup. Then, when I doubled the recipe - I didn't have enough chili beans, so I substituted some kidney beans (drained) instead. I wanted my chili meaty, so I substituted about a pound and a half of browned ground beef for the second cup of TVP. The result was delicious. I am sure that it would be equally tasty made accoring to the recipe - but I would hold off on part of the water, and see how thick you want it.

Chewy Chocolate Chip Oatmeal Cookies

The best oatmeal cookies I've ever had. I'm not a big oatmeal cookie fan, but these are fantastic. I made them just as the recipe instructed, except I left out the walnuts, since I didn't have any on hand. These are great! Make some for your dad or husband. :) These were so good, I did an entire post on them at my food blog.

Banana Peanut Butter Bread

I really enjoyed the muffins I made based on this recipe and other's reviews. I used 3 bananas, 3/4 Cup chunky peanut butter, 1 3/4 Cups flour, and added 1 teaspoon of vanilla. Then I baked them as muffins for 25 minutes. Everyone at work loved them. :) The remaining batter I did in a loaf pan - but it did take a long time to cook all the way through - but when it was done, it was tasty too. :) Give some variation of this recipe a try!
