Best Ever Brisket

Pineapple Grilled Pork Chops

I accidentally marinading these for 2 days . . . results were delish! Also added fresh grated ginger, as another reviewer suggested & it really brightened the flavor. My family really loved this dish!

Brunch Strata

Used Neufchatel cheese instead of cream cheese & omitted the mushrooms (because of my kids). Very good!! May want to saute veggies in butter or olive oil instead of vegetable oil next time.

Grilled Romaine Salad

Excellent!! Didn't have all the ingredients (shallots) & didn't want the oven on to make the tomatoes (because it's too hot). Improvised with onions in the dressing & decreased the olive oil significantly. Family loved it!! Will definitely make again!

Hearty Italian Lentil Soup

Prepared per the recipe, without changes. This soup was only okay for my family. Not sure I will make this again, as it was time consuming forming the meatballs & preparing the lentils & rice separately.

Glazed Meatloaf I

My family loved this meatloaf! I did make changes, some were made because of necessity (that's all I had), others were made because I wanted to. I doubled the glaze & used 3 lbs of ground beef/ground pork mix. To it I added 1 cup of Italian bread crumbs & parmesan cheese. Sauteed the onions in a little butter to soften them. Added 2 eggs & some minced ginger, too. This gave me enough mixture to make 2 loaves. I don't like cooking meatloaf in a loaf pan, so I cut out some parchment paper the size of the meatloaf & cooked the loaves on a rack atop a cookie sheet. Yummy!!!

Crustless Spinach Quiche

The Best Bean and Ham Soup

This soup was really good! My kids & husband did not look on it all too kindly, knowing it was "bean soup", but they all gave it a thumbs up. I prepared it exactly as described, including BenevolentEmpress' additional notes in the review section & it turned out wonderfully. This recipe made LOTS of soup, too. I fed my family of 4 & have enough soup for 3 more dinners (which I froze)! This will be my go to recipe when I have leftover ham & a hambone!

Chocolate Peanut Butter Bars II

Wow- these bars are better than peanut butter cups! I used the advice of others & added 1/2 cup of graham cracker crumbs to the peanut butter mixture. I ended up making these bars twice because the first time I decided I wanted a thicker layer of peanut butter & used an 8X8 pan, but I didn't decrease the chocolate layer. Once the chocolate layer set up, it made the bars very difficult to cut! So, darn, I had to keep that batch to myself because they just weren't pretty enough to share with others! Thank you for sharing!!

Heavenly Potatoes and Ham

My family loved this! Used the leftovers from our spiral ham to prepare this casserole. Followed the directions of misskim's review & it came out beautifully. Used Cream of Broccoli soup (that's what I had) & 2.5 lbs Yukon Gold potatoes. Cooked in a metal 9X13 pan at a temp b/t 350 & 375 for 30 minutes. Very good!

Slow Cooker Beef Stroganoff I

Wow!! Couldn't believe how great this meal was! My husband & kids couldn't stop eating it. I followed most of Jillybean14's suggestions, but didn't have all the ingredients, so I improvised. I pretty much followed the ingredients list as marked in the original recipe, but added salt, pepper & garlic powder to the meat (1.5 lbs stew meat). Cooked on low for 5 hours. Added 1 beef bouillion cube, along with the cream cheese. Served over egg noodles. Delish!!

I used 4 egg whites instead of 2 eggs, 1/4 c. flour, 1/4 c. breadcrumbs & cheddar cheese instead of mozzarella (didn't have mozz). Tasted great!! Thanks for a good & easy recipe.
