Vegetarian Meatloaf with Vegetables

I got my carnivore husband to eat a complete veg meal which speaks for itself. I added zucchini, red pepper, grated parm, and tomato paste to the wet mix and a splash of balsamic to the tomato sauce. Also subbed sausage Gimme Lean because that was all that Trader Joes carried, but am happy that I did. Served with a side of marinara.

Sloppy Joes II

I made mine vegetarian with Morningstar crumbles. They were fantastic. I added a splash of Worcestershire while the mixture was simmering. Topped with very sharp cheddar.

Chutney Baked Brie

Whipped Cream Cream Cheese Frosting

I wanted a light and fluffy frosting for cinnamon rolls (a la cinnabon) and this was the perfect recipe! I will never go back to dense and gloppy cream cheese frosting again.

Joey's Peanut Butter Cookies

I'm in love. Each year, my friends and I get together and have a big bakathon, and these were one of my additions to the party. I rolled them in tsp sized balls and rolled them in sugar and placed a Hershey kiss on after they came out of the oven. They stayed so puffed, which looks really cute. A honey of a recipe.

Sugar Free Eggnog

I have been craving egg nog for weeks, but everytime I would look around in stores, all I could find was garbage laced with fat and sugar. I was a bit nervous about the results because of the pudding, but this was dynamite. If you were to do a blind taste test, people wouldn't have any idea that this was not real egg nog. Awesome.

Yummy Artichoke Dip

I made this for a baby shower, and wish that I would have doubled or even tripled the recipe. It didn't last 5 minutes. I used half lemonaise, half mayonaise and added chopped black olives. Also, I used marinated red peppers and a generous amount of fresh grated parm. Will def put in my recipe box.

Gramma's Apple Bread Pudding

I was not impressed. It tasted fine but looked bad. I am not sure why you would add the milk and eggs separately because it ended up not combining and effected the final product. The butter was never fully absorbed and the bread never got puffy like I would have liked it to.

Raspberry and Almond Shortbread Thumbprints

These ended up being not at all what I was looking for, but delicious all the same. I added an egg and bumped up the flour by 1/4 C. I took them out after 10 minutes and they were perfect.

Bread Pudding II

I am pretty sure that I haven't had bread pudding, but it sounded different and delicious so I tried it. I used about 8 slices of challah because it is a very moist, egg-y bread. I added about 1 tsp of almond extract and dusted the top with nutmeg with superb results. In the future I think I will toy with it a bit adding pears or apples.

Homemade Black Bean Veggie Burgers

I can't get enough of these burgers, although I do make a fair amount of changes. I omit the cumin and chili powder entirely and instead add chopped jalepeno peppers. In order to keep the burgers together, it is important to put the peppers and onions in a sieve to express all the moisture after they go through the food processor or you will end up with watery patties. I use plain oatmeal instead of bread crumbs, and double the amount. Additionally, I like to shred parmesan cheese into the mixture before forming the patties. They are fantastic with bbq sauce

Tres Leches (Milk Cake)

I make cakes for each of my friend's birthdays and this was requested for the most recent birthday. The two of us seemed to be the only 2 people who were interested in the cake. I think the peeps didn't like the soggy bottom, but then again I don't think that anybody had any idea what the cake was in the first place. I would make again, but probably not for my meat and potatoes crowd.

Cream Cheese Frosting II

Yowza. I couldn't keep my grubby mitts out of this to save my life. Luckily the recipe makes a ton of frosting so nobody was aware of my taste testing. I would put this on just about anything that required frosting. Would be fabulous on cinnamon rolls.

The Best Vegetarian Chili in the World

I have been searching for a long time for a chili that I would use above all others, and this is it. There is so much versitility that it is virtually fool-proof. It would be very easy to substitute or add to the recipe.

Caramels I

I was very concerned when I read the instructions to not stir after it begins to boil, but I made it as written and could not have been happier with the results. My friends said that these tasted like the caramels that you buy at the coffee shop.
