Corn and Chicken Soup in the Crockpot

Reviewed: Feb. 6, 2010
Fabulous soup! I took Cindy's advice and omitted the thyme, but kept the green onions. Instead of skim milk, I used nonfat evaporated milk to add a little richness to the flavor. Since I had a few slices of leftover bacon, I sprinkled a little over the top, and served with some crusty French bread. Yummy! Perfect cold weather lunch.

Grilled Zucchini I

Reviewed: Jun. 26, 2009
4 stars as written, but 5 stars with changes. I used olive oil instead of butter, and sprinkled the zucchini with garlic salt and cayenne pepper. Omitted the foil, and grilled directly on the grill. Absolutely unbelievable flavor!

Apple Cranberry Cobbler

Reviewed: Dec. 28, 2008
Fantastic! I took this to my daughter's house for Christmas dinner, and everyone raved about it. I made a few changes: used dried cranberries instead of fresh and cut back to 1 cup of sugar, 1/2 white and 1/2 brown.

I didn't care for this. I felt that the zucchini was out of place in this recipe.

Chipotle Shrimp Tacos

Reviewed: Jul. 16, 2008
I loved these! they were very spicy and delicious. With all the bacon, they are a little high in fat, so I need to come up with a way to keep the amazing flavor, but reduce the fat.

Chicken with Chipotle

This is fantastic! Very spicy, and very yummy! I used boneless breasts instead of legs, and sauteed them in my skillet. I removed them to create the sauce, then added them back at the end. Delicious!

Fabulous flavor! I substituted Spelnda for the sugar, and put all the ingredients into one of those new vegetable steamer bags, and microwaved for about 4 minutes. Delicious!

G's Flank Steak Marinade

Reviewed: Feb. 1, 2008
This was fantastic! I followed the recipe exactly, although I could find flank steak and had to use London broil. I let it marinate for 2 days, then grilled it to medium rare, @ 5 minutes per side. Excellent!
