Simple Crustless Spinach and Mushroom Quiche

Great recipe! Used ham, broccoli & red pepper since that is what I had - this is a keeper!! Intake 60 minutes in my oven. Thank you r the yummy recipe ;)

Curried Coconut Chicken

I was so sure I was gong to like this - it had great reviews! Followed the recipe to they"T" too ... Had to thicken it (too runny) and it just tasted like tomato soup with chicken. The chicken could have cooked in the 30-40 minute simmer - which would have saved a lot of time too. I love curry too but I don't recommend this one ;(

Gorgonzola Cheese Sauce

Here i go - rating a recipe with "my" changes, sorry! This sauce is SO easy and awesome BUT I only used 2 cups milk and increased to 1 cup Gorgonzola cheese - we love a stronger, flavorful sauce. (similar comments from others prompted m o make these changes). LOVED it and will keep in my favorites - thanks r the recipe!! ;)

Classic Bran Muffins

I think it's a yummy base recipe! I added chopped apple (instead of raisins, preference) 1/4c of flax seed meal and 1/2c of applesauce (needed it higher in fiber) and they were still awesome - even after I messed with it :) Thank You Janet for a great recipe!

Cranberry Muffins

Great recipe! I didn't have the time to "sift" and "beat" the ingredients - started with the wet, added the dry and done! Also added white chocolate chips - yum. (my non-healthy version!) They were a hit :) Will be making again!

Peach Shortcake

Easy and yummy!! Used canned peaches - did not have fresh (should have mashed half of them) and made small shortcakes as mentioned by other reviewer. Cut them in half, loaded them up and topped with whipped cream or ice cream. Thanks for the recipe!

Soft Gingersnaps

Great Recipe Shawn!!!!! Easiest for me to refrig overnite and alternate 2 cookie sheets so the dough doesn't get too warm before you are done. Did another batch and tried to be a bit healthier and they turned out great too! Used 1 c. butter and /2 c. butter buds (1 packet with 1/2 c. water), 3 c. white flour and 1-1/2 c. wheat flour, and 1 c. sugar and 1 c. stevia in the raw - love the richness of this recipe - thanks!!

German Chocolate Upside Down Cake

Very Tasty! I baked it for my Mother's 80th birthday party - it's her favorite cake. As noted before - it's not the prettiest, as it comes out of the pan a bit awkwardly but tastes great! will make again -

Crab and Swiss Quiche

Great recipe! As recommended I used 3 eggs instead of 2 - glad I did. Easy to make new versions - our favorite to date is cooked chorizo (8 0z. +/-) and half a small can of diced green chiles. Mine took about 60 minutes to get done. Yumm!!

Banana Sour Cream Bread

It's my favorite! I too made some changes for a healthier result: only 2 cups sugar; I sub'd 1/2 c. butter buds and 1/4 c. applesauce for the 3/4 c. butter and use 2 c. white and 2 c. wheat flour with 1/4 c. ground flax seed for the 4.5 cups of flour. USE THREE LOAF PANS - you will be glad that you did :o)

Cinnamon-Curry Tuna Salad

Very good! Did have to use 2 Tbs. of mayo, no relish and did not use the full amount of cinnamon - only 3/4 tsp. May try full amount in the future :o) Served on warm biscuits layered with shredded cheese and thinly sliced cucumber - will make again!

Chicken Enchiladas II

Great Recipe! Double recipe, use lasagne dish and use enchilda sauce instead of milk. I PREFER cream of chicken soup (healthy choice), 2 4-oz cans of mild green chiles, some cumin and nonfat sour cream but extra cheese :o) Serve with spanish rice and you're set. Make ahead or freeze - all have worked for me. Enjoy!
