Homemade Black Bean Veggie Burgers

This was a great base recipe! I used creamed corn instead of eggs (we are vegan) upped the bread crumbs by 50% as other users suggested (I use Panko) added 2 TBSP flax seeds and 1/4 cup shredded carrots, used 2 bunchs of green onions and 4 cloves garlic. Ommited the chili flavorings (personal preference). I baked them 7 min each side then lightly sauteed in olive oil. Served on whole wheat english muffins toasted with garlic-butter and a side of sweet potato fries - it really hit the spot!

Award Winning Soft Chocolate Chip Cookies

This was just the base recipe I was looking for! We are vegan and I wanted to make regular old chocolate chip cookies. I halved the recipe using 1 cup white whole wheat flour, 1/2 cup stone ground flour, 3/4 cup oat flour, 1 tsp baking soda, 1 cup vegan margarine, 1/2 cup raw cane sugar, 1 TBSP molasses, 1/2 tsp Stevia, 1 TBSP vanilla, 2 TBSP flax seeds (ground) whisked with 6 TBSP water in place of eggs, 3/4 cup walnuts & 1 1/2 c semi sweet vegan choco chips. They were FANTASTIC!!! The only other change I would make is adding a little salt next time. Otherwise fantastic, I really tried to get a good mix of old fashioned cookies but with healthier ingredients and this was perfect! My husband and Sister in Law raved!

Baked Kale Chips

These were fantastic!!! I used Olive Oil cooking spray on my cookie sheet, put a single layer of kale leaves and lightly sprayed the top of the kale. Baked at 340 for 9 minutes and they perfect! Sprinkled some salt, onion & garlic powder lightly when just taken out of the oven. This will be made ALL the time in our house!

Playgroup Granola Bars

I don't normally rate recipes I change but the base was good, I thought it had too much sugar & fat as written. I used 1/4 c oil, 1 cup applesauce, 1 tbsp podwered ginger, upped the cinnamon to 1 tbsp, 1 cup pupmkin flax cereal (any cereal would work), and 1 cup apple granola, 1 cup currants, 1/2 cup raw organic sugar, 1 cup stone ground flour, 1/4 cup flax seeds, 2 cups oats, salt. Also we are vegan so in place of the egg, I used 1 tbsp powdered flax seeds whisked with 3 tbsp water (whisk until mix gets thick), and in place of honey, I used 1/2 c lite pancake syrup. I baked in 9x13 pan for 15 min and they came out perfect!!! I can't wait to make different versions, a dessert one with peanut butter, pecans & chocolate chips is calling my name!!!!

Yuca French Fries

These were fantastic. I gave it a 4 only because I made so many changes, but the concept is great! My fiance can't eat nightshades so he really misses traditional potato fries, I made these the other day and they were a hit! I did some research online and found the best way to cook is to boil until just tender (I used water and threw in a bouillon cube for flavor) and then drained, let cool and cut like steak fries, coated with Olive oil spray and tossed in a mix of onion powder, salt, pepper and some Nutritional yeast - baked until crispy turning once or twice. We'll be making these ALL the time!

Zucchini Alfredo

This was GREAT! Made a lot of changes - mostly because of dietary restrictions - used Silk soymilk (double) and Tofutti cream cheese - added around 3 TBSP Nutritional yeast and 2 TBSP VEGAN Parmesan, 1/2 onion, used 2 TBSP minced garlic - would add a little more next time. Only had 1/4 c of fresh basil so I used fresh parsely to make up the bulk, also only had 3 3/4 c zucchini so I added 1/4 c diced mushrooms. I would add more mushrooms next time. Great concept - easy to make! This one is a keeper - the whole family loved it.

Asparagus Cashew Rice Pilaf

Recipe base was great! I thought it lacked some flavor so I used the Garlic Asparagus recipe from this site to spice things up a bit. Used Basmati rice and whole wheat angel hair. Everyone loved it!

Curried Lentils

This was a very good base recipe. I was looking for something Indian with no tomatoes and this hit the spot. I upped the recipe to make 6 servings to feed my fiance and have leftovers for lunch the next day. Used red lentils and reconstituted 2 veggie bullion cubes instead of plain water, also added about 3/4 cup shredded carrot and a can of baby peas. Threw it all in the crock pot and let it go for a few hours. Was still very watery when done (probably because I used coconut milk & soy milk instead of coconut cream) so I just added cooked basmati rice to the mix and turned out wonderful!

Chocolate Frosting II

This is an excellent recipe! I used chocolate soy milk and added a TBSP of coffee grounds, it had this great mocha flavor! Everyone loved it, even my 8 year old god-daughter! This is now a favorite in our house.
