I was a vegetarian for 9 years and recently went vegan. My husband is vegan and due to health issues cannot eat any foods in the nightshade family (tomato, potato, eggplant, peppers) so sometimes cooking is a challenge, but I love trying new things and adapting recipes to suit our dietary needs.
My favorite things to cook
Anything vegan. Particularly Indian, Mexican and Chinese cuisine. I am currently experimenting with different types of tofu as well as seitan and tempeh. I am also working on substitutions for tomatoes & potatoes.
My favorite family cooking traditions
I love my husband's Polish family traditions. I love making "authentic" Kraut Pierogi and Kapusta for Christmas.
