Yes, I am welcoming myself!  I am so excited to start this blog!  I have been wanting to document my cooking triumph's and tragedies for so long!  Finally, a good, supportive and friendly place to do just that.  I cook only vegan food for myself and my husband.  We… MORE

About this Cook
I was a vegetarian for 9 years and recently went vegan. My husband is vegan and due to health issues cannot eat any foods in the nightshade family (tomato, potato, eggplant, peppers) so sometimes cooking is a challenge, but I love trying new things and adapting recipes to suit our dietary needs.
My favorite things to cook
Anything vegan. Particularly Indian, Mexican and Chinese cuisine. I am currently experimenting with different types of tofu as well as seitan and tempeh. I am also working on substitutions for tomatoes & potatoes.
My favorite family cooking traditions
I love my husband's Polish family traditions. I love making "authentic" Kraut Pierogi and Kapusta for Christmas.
My cooking triumphs
Vegan Green Bean Casserole ~ Apple Crisp ~ Vegan donut holes ~ Fresh Blueberry Pie ~ Marinated Tofu Stirfry ~ Vegan Chili ~

Fluffy Pancakes
This is such a great base recipe. We are vegan so a few modifications were needed but I've never had any issues with substituting. I've used soy, almond or cashew milk with great results and replaced the egg with either mashed banana or ground flax. Have also replaced the butter with oil, applesauce or smart balance/earth balance. Never had any issues! Always tasty & fluffy. I do recommend a little vanilla though. Enjoy!

Homemade Black Bean Veggie Burgers
This was a great base recipe! I used creamed corn instead of eggs (we are vegan) upped the bread crumbs by 50% as other users suggested (I use Panko) added 2 TBSP flax seeds and 1/4 cup shredded carrots, used 2 bunchs of green onions and 4 cloves garlic. Ommited the chili flavorings (personal preference). I baked them 7 min each side then lightly sauteed in olive oil. Served on whole wheat english muffins toasted with garlic-butter and a side of sweet potato fries - it really hit the spot!

Award Winning Soft Chocolate Chip Cookies
This was just the base recipe I was looking for! We are vegan and I wanted to make regular old chocolate chip cookies. I halved the recipe using 1 cup white whole wheat flour, 1/2 cup stone ground flour, 3/4 cup oat flour, 1 tsp baking soda, 1 cup vegan margarine, 1/2 cup raw cane sugar, 1 TBSP molasses, 1/2 tsp Stevia, 1 TBSP vanilla, 2 TBSP flax seeds (ground) whisked with 6 TBSP water in place of eggs, 3/4 cup walnuts & 1 1/2 c semi sweet vegan choco chips. They were FANTASTIC!!! The only other change I would make is adding a little salt next time. Otherwise fantastic, I really tried to get a good mix of old fashioned cookies but with healthier ingredients and this was perfect! My husband and Sister in Law raved!
