Shoofly Pie

Wow! I never had shoofly pie before and I love it. It's very homey and satisfying. I had only very dark molasses so I mixed it with a couple of tablespoons of corn syrup to make 1/2 cup total. The topping was dry and next time I will add a little less flour or more butter. Very, very good.

Fish Chowder

We enjoyed this soup last night while the rain poured down and the wind howled. It is delicious comfort food that's good for you too. The recipe seems to tolerate tweaking very well. I used only one can of (fat-free) evaporated milk, added a can of chopped clams, upped the mushrooms and spices, and substituted haddock for cod. My husband and I rate dishes on a scale from 1-10 and he said this is a ten. It made a big batch but he said no, we should not share it with the neighbors.

Corn Pudding II

Our chickens are laying lots of eggs so I tried this recipe to use some up. It turned out really well. I misread the recipe and used two 10 oz bags of supersweet corn. I reduced the butter to 2 tablespoons and the sugar to 1/4 cup. Baked in an 8.5 by 11 inch casserole, it took far longer than 45 minutes, maybe 1.25 hours. Turned out as a creamy custard over a corn base and was plenty sweet enough for my husband and me. The corn was a little watery on the bottom but fine. Will make for company and holidays.

Creamy Caramel Flan

YUM! My husband finds most desserts too sweet but he loved this, and so did I. I used 6 6 ounce ceramic cups to bake it in and it fit perfectly. I overcooked the sugar, and it stuck in big clumps to the bottom of the cups, even though I heated them first. No big deal-it formed a nice syrup anyway, but that did make some craters in the surface of the flan. I'll have to read up on other reviews for suggestions about caramelizing the sugar. This will be great to make for company, especially after a light meal, because it has some substance to it.

Curried Mustard Greens with Kidney Beans

This was absolutely delicious made with fresh mustard (and some kale) greens from the garden. I used coconut milk (low-fat) instead of the cream, onions and garlic instead of the shallots, home canned tomatoes, extra ginger and a lil bit of garam masala. Yummy and a great way to eat some nutritious greens and beans.

Delicious Raspberry Oatmeal Cookie Bars

These are terrific. I did make one pretty major change which was to use a couple of cups of a black raspberry/ dark cherry mixture cooked with sugar and cornstarch instead of the jam. Yum!
