Southern Butternut Squash

Hi there - made this for Thanksgiving Dinner 2005, and it was the hit of the dinner! A little Southern cooking all the way in Boston! Easy to make - and tastes great!

Too Much Chocolate Cake

One of the best chocolate cakes I've ever made! Took longer than 55 minutes to bake (and that worried me), but the end product was delish! Served with ice cream and our favorite hot fudge sauce from a local ice cream shop. Perfect!

Banana Banana Bread

I lost my favorite banana bread recipe that I have had for over 30 years and tried this one. What a keeper! I did what others suggested - added some cinnamon, nutmeg and vanilla, and some walnuts. Excellent recipe - easy to make and very tasty!

Slow Cooker Pot Roast

WONDERFUL! Put in quartered red potatoes and baby carrots - and cooked it for about 8 hours. It was PERFECT. Used the ranch dip mix as someone else suggested as I couldn't find ranch dressing mix. This is a keeper!

Chicken and Corn Chili

Loved this! Added the green chilis, used pineapple salsa and black beans (not the pinto), and did the frozen corn as mentioned in a few reviews. Added some rice towards the end - and WOW!!! Absolutely delicious. Total keeper.

Mini Upside Down Pineapple Cakes

Was very simple to make (except the pineapple rings didn't fit in my muffin cups so I cut them up) - and truly delicious! I made 20 of them for a family dinner, and not even one was left. Warm them before serving and serve with vanilla ice cream - Yum!

Tater Tot Casserole III

Quick and easy to prepare - I would definitely spice it up - I added the worchestershire sauce and the salt (as well as lots of pepper). I used a "healthy" version of the soup and half the milk - worked just fine!

Bacon Ranch Pasta Salad

It was very good - but I didn't have enough of the dry ranch dressing when I put it all together (buy 2 packages to get your 3 TBSP)...It was great - loved the bacon add, and I used roma tomatoes. Yummy!

Savory Tater Tot Casserole

Pretty good - perfect for a cold New England night! I browned the hamburg with onion and garlic powder, and added frozen broccoli, carrots and cauliflower. Also sprinkled with a little cheddar cheese. Yummm!

Macaroni and Cheese V

Very good - I made this for 12 using ziti instead of elbow macaroni. I also didn't have shredded cheddar, so I cubed what I had and left the milk mixture on the stove, heating, and mixed in the cheese. Delish - just like my 94 year old grandmother used to make - and she LOVED today's version; she took the leftovers home to have for lunch tomorrow!

Mixed Vegetable Casserole

Made this for Christmas 2010 and used two bags of frozen veggies thawed (one California mix, one broccoli) - very delish, easy to make... this will replace green bean casserole for our family for awhile!

Easy Chicken Rice Casserole

Made this tonight for dinner. Used 1 can of cream of mushroom and one of cream of chicken, and added a bag of frozen mixed vegetables. Kind of bland tasting; would add more salt.

Italian Sausage and Zucchini

Wow! So easy, and very tasty. Added the chicken broth (about 1/2 a can; low-fat and salt-free) and used Italian-spiced diced tomatoes. Added lots of garlic, oregano and italian spices and more than the amount of veggies listed. Topped with some parmesan cheese when serving over rice, and this was just great!

Tri-Color Pasta Salad

I really modified this one for a cook-out out at our camp today. Rave reviews. pasta, parmesan cheese, diced danish ham, broccoli, red onion, black olives, italian seasonings, cukes, and Wishbone Robusto salad dressing. Folks LOVED it...
