Mom of 2, married to a railroad engineer....so I have to cook at all hours it seems! Love to eat, hate to work out, but if I want to eat great things I have to!
My favorite things to cook
Baking!! My mother works for King Arthur Flour so I get LOTS of free thing and it just inspires me to try out different flours and use the specialty things that they sell in different things. I really recommend their baking companion and their cookie companion books, I have learned a lot just by reading them. As a result I am a MUCH better baker.
My favorite family cooking traditions
My mother used to let me cook/bake anything I wanted growing up as long as we had the ingredients and as long as I did all the dishes (We did not have a dishwasher, so if I embarked on a project, I was committed!). I would have to read through a lot of cookbooks to find something with the ingredients we had in the house, but it taught me to venture off and try new things.
My cooking triumphs
My first Thanksgiving!! Thanks to this website it was a total success.
My cooking tragedies
Too many to count. One that sticks in my mind to this day is when I was about 13 and I made no-bake cookies for my next door neighbor. I forgot the shortening. I still think about that.

Chicken Parmesan
My husband's new favorite! My kids love this! It is important that you use PANKO breadcrumbs, it makes it crispier and therefore it will not get soggy. I use Bove's marinara sauce (from VT). I omit the salt because there is salt in the panko and cheese and I found it too overwhelming. I also use chicken tenderloins for the kids like because they are smaller (and easier to flatten out and much shorter fry time), but chicken breasts for my husband. Delish. Every time.

Roasted Chicken Broth
Easy to make, even if you have chicken broth from something else you made, you can add the ingredients and it turns out great!

Debdoozie's Blue Ribbon Chili
I give this 4 stars only because it is missing that little kick that you get...maybe cumin? But it was darn easy and darn fast, and I thought it was really good. Will be putting this in rotation at my house.
