Apple Strudel Muffins

I just made these gluten free and vegan. The result was the best muffin I have ever had in my life! I used 2 cups of Jewel's All Purpose GF Flour, butter flavor shortening and flax meal eggs to make them GF and vegan. I only used 1 teaspoon vanilla, but added 4T of unsweetened applesauce, 1 teaspoon cinnamon, and used 1 shredded and 1 chopped Granny Apple. I omitted the crumble entirely and will never add it as it is perfect on its own.

YUMMY! I used vegetable broth to keep it vegetarian and 505 green chile sauce for the salsa. It tastes like the pork green chile I used to make.

Spinach Enchiladas

DELICIOSO! The only changes I made were rubbing each tortilla with butter while heating to soften even more and adding about a 1/4c heavy heavy cream to the enchilada sauce. The second batch I made was with cheddar and it was just as good.

Quinoa and Black Beans

Delicious! Added pine nuts half way through my 2nd bowl of it and it took it to a new level. First time I've had quinoa and it won't be the last! The onion seemed like a lot, but it wasn't. I added some ground flax seed.

White Chocolate Raspberry Cheesecake

Delicious. Used an Oreo crust. Baked an hour on a cookie sheet with water & the spring pan wrapped in foil to keep the water out, then shut the oven off and left it in there one more hour. I mixed raspberries with sugar (set an hour) & placed it in a bowl for people to spoon it on if they wanted. This made it unbelievable.

Avocado Feta Salsa

Delicious Twist! My family memerbers are guacamole connoisseurs and they loved this. I made this the night before without the avacado and then added the avacado right before serving. I also used a plastic knife to cut the avacado - it browns slower this way. I used CHERRY tomatoes instead. The FETA is a MUST.

Spicy Bean Salsa

REFRESHING! I used white beans instead of blackeyed peas, the entire bell pepper, and a bag of frozen sweet corn. I also used spicy Italian dressing, but a lil less than called for and added some chopped jalapenos. Everyone loved it.

Spinach Quiche

Amazing taste. I did precook the crust for about 6 minutes, as someone else suggested. I also used less cheddar. This did make too much for one quiche so I put all of the spinach/cheese mix in the crust & poked a few holes in it so the egg would get in. Then I poured as much of the egg mix in that would fit & tossed the rest. Next time I will probably make 1/2 the egg mix. Everyone loved it and they commented how much more they liked it than other quiches BECAUSE it was not eggy. One person who didn't like quiche said it was the first thing she ate.
