Artichoke & Spinach Dip Restaurant Style

Easy and yummy! I cooked mine in a skillet instead of baking it because I was taking it to a party so I transferred it to a small-crockpot-type thing to keep dips and such warm. I also didn't roast the garlic, because I like a more strong garlic flavor, though it would be good roasted too! I just sauteed the garlic cloves and added the frozen spinach, which I covered and allowed to steam. Then I mixed in the other ingredients, the whole jar of alfredo sauce and the whole block of cream cheese. Added freshly ground black pepper and a bit of hot sauce to taste.

Slow Cooker Chicken Stroganoff

This is really yummy with a few alterations. I didn't use a slow cooker, and it was still easy and delicious. I used cream of mushroom with roasted garlic soup and low-fat cream cheese. I would definitely add white wine and only use 4 oz. of cream cheese. Mix with 12-16 oz. of pasta and chopped flat-leaf parsley. Yum!

Angel Chicken Pasta

Easy and yum! I used 1 lb. of chicken tenders that I cut into chunks and browned in a mix of butter and olive oil. Then I added the Italian dressing, plus a sprinkle of cayenne. Degalzed with the wine before adding 1 can of cream of mushroom with roasted garlic soup. I let this all simmer for awhile, adding more wine when the mixture got too thick. After about 20 minutes, I added the cream cheese, then a bit more wine, before mixing with the pasta. My boyfriend who prefers pasta with just butter and canned "parmesan" cheese loved this!

My Kid's Favorite Pork Chops

Easy and delicious! I used two very thick bone-in chops, a good dark beer (Harp), and Sweet Baby Ray's Honey BBQ Sauce. Because I only had two chops, I cut down on the BBQ sauce but still used a whole bottle of beer and let it reduce before simmering. Also, instead of steak seasoning I just used a bit of salt, pepper, paprika, and thyme leaves. I added a bay leaf and some chopped garlic to the braising liquid. The results were tasty and juicy. I also spooned some of the yummy braising sauce over homemade mashed potatoes, yum.

Korean BBQ Beef (Pul-Kogi)

Mmm, so simple and so good! I added some carrots cut into matchsticks and a bit of hot sauce, and cooked the beef and its marinade in a super hot wok and served it over rice.

Quinoa and Black Beans

mmm! so good! my friends and i have a veggie potluck twice a month. i made this dish for tonight, but in a rush actually forgot to bring it. i left it on my kitchen counter and when i got home i was so hungry that i ate almost 1/3 of the pot! i added 2/3 can of tomatoes and a bit of extra cumin and cayenne. very delicious.

Easy Mushroom Rice

This is a recipe my family has been making for years! Everyone loves it and it's so easy. I make mine healthier by using low-sodium broth, a bit less butter, and brown rice instead of white. With brown rice you have to increase the cooking time, but it turns out just as nice. Sometimes I cook chicken in with the rice - I just throw it in with the rest of the ingredients before popping it into the oven and it's always cooked through and juicy when the rice is done.
