Very Simple Spelt Bread

Very simple indeed! Has a great crunchy crust, and holds together pretty well (just don't slice too thinly). Only caveat is that it dries out quite fast, so if not eaten in one sitting, may need to toast it afterwards. Great with honey and butter.

Bran Flax Muffins

Love these! I made a loaf of bread instead of muffins, and kept a portion of the apple in chunks (really adds a nice juicy component to an already great recipe). Did not have oat bran, so used wheat bran instead, and subbed half the white flour with whole wheat. Who knew health food could be so addictive!

Easy Vegan Whole Grain Pancakes

I liked the texture, but the overall taste was very bitter... I had to drown them in honey and butter, and still could taste the bitterness. Anyone have any tips on how to improve this, since I really do like the idea of using rye flour in pancakes. Thanks!

Dilly Bread

Fantastic bread! Especially great for when you don't want to get your hands and counter sticky from kneading. I used fat free cottage cheese and dried dill weed.

Sourdough Buckwheat Pancakes

My pancakes came out great -- fluffy and tall without me having to apply any tricks (such as beating eggwhites to stiff or adding carbonated liquids). My starter is pretty thick, which might have something to do with it (I had to add some water to thin down the batter a bit). A very nice way to use buckwheat.

Basic Corn Muffins

I really like these muffins! Simple to make, and the texture is really great -- not too dry or wet. I used applesauce in place of the oil and it turned out just fine. Especially love the crispy crust.

Irish Brown Soda Bread

Very easy to make, good dense texture, BUT so bland! I think it does need some sweetener, or should just be used as a conduit for spreads. I had mine smothered with sweetened cream cheese.

Excellent and Healthy Cornbread

This is a great recipe, and so easy! I used egg beaters and made muffins (to maximize crust area -- I like a lot of crust on my breads). The texture was wonderful, just the right amount of moistness and chewiness. Wonderful with cream cheese!

Quick and Easy Pizza Crust

I was quite impressed with the results, especially considering how easy and quick it was. I let the dough rise a bit longer (closer to 15 mins) and added Italian seasonings. Nice chewy texture.

Oatmeal Whole Wheat Quick Bread

Really a very easy bread to make, best if eaten the next day. I don't recommend baking at 350 for an hour, because the crust gets very tough that way. Goes very well with cream cheese or pumpkin butter =)

Zucchini Walnut Bread

Pretty good recipe, although my bread came out a bit "wet" on the inside, not just moist. Maybe I should've drained some of the liquid from the zucchini gratings? The crust was great, and yes, it's a nice, desserty sweet bread =)
