To Die For Blueberry Muffins

Awesome!!! This is my new standard muffin recipes. It also works well with other berries. I have also used splenda & they have turned out well.

Big Guy Strawberry Pie

I have tried this pie 3 time is the past week. I have followed others suggestions, but still can't get it to turn out. It always taste great, but never looks the best. The first time the filling did not thicken & I did not grease my pan so it stuck. The second time my sauce turned out great, but I greased my pan & the crust slid down & formed a big cookie. I through the filling in a store bought crust. I seem to have the filling down( I use the kool aid for color & sweetness) but the crust mever seems to fit all the way up the sides of the pie pan. The taste is awesome. Just wish I could get the crust down.

This is an AWESOME cheesecake, you would never know it is low sugar. I did find the reduced fat vanilla wafers & used those. Good plain or with fruit topping

Slow Cooker Scalloped Potatoes with Ham

I modified this slightly. I eliminated the ham since I was making a full ham to go with these. I also eliminated the onion. I used the cream of mushroom soup & one full soup can of milk instead of water. Along with the chedder cheese I added about 3/4 C of mozz. cheese & monteray jack that I had in the fridge wanting to use up. I also added about 3 cloves of crused garlic. Everyone loved them! I just threw everything in the crock pot very early in the day & kept it on low for about 5 hours then went to high for the last hour. Will be making again & again.

Eclair Cake

Anything this GOOD, easy, quick & inexpensive to make must be a sin!!! The only thing I changed was I made homemade milk choc. frosting. Will be making again!!! Made again, but in alOW FAT version using low fat grahm crackers, sugar free pudding, fat free cool whip, 2 Cups instead of 3 of skim milk & drizzled sugar free chocolate syrup for frosting. Still very good & great for people watching their weigh or diebetics

Spinach and Cheese Stuffed Pasta Shells

Based on some other responses I motified this recipe & removed the fennel seeds, added one beaten egg & 1 C shredded moz. cheese. Also I cut spinach in half. Served them for a ladies lunch & they went over wonderfully! Nice make ahead dish so you are not rushing at last minute & can enjoy your company

Caramel Pound Cake

Cake was fair, a bit heavy for my taste. Frosting was WAY to sweat & could not get the graining sugar texture out of it. Would not make again.

Almond Shortbread I

Just made these, followed other suggestions & cut flour to two cups, rolled thin & cut with 2 1/2" decoritive cutter. Dipped 1/2 in melted milk chocolate. They are wonderful. Will be making another batch!!
