Shrimp Scampi Bake

Kids and I loved it!!! I was worried it would come out too salty because there was soooo much butter, but it didn't. It came out great. The only substitution was the parsley. I didn't have fresh parsley so I used dried and I didn't have Dijon mustard so I used regular mustard.

Banana Pudding Cake

This was an okay cake. I added one Tbs of milk for the frosting because it was too thick. Otherwise I followed everything else. But, my kids LOVED it!!!

Walnut Balls

This were great. They are very crumblely, but defenitely good. I did add an extra 2 Tbs of butter because my dough was not holding at all and I did not roll them in sugar, per the end of the recipe. My kids loved them. I was going to send them to Afghan for a care package and by the time I turned around most of them were gone. It might have been because of the extra butter, but my cookies were a little flat at the bottom after cooking.

Chocolate Chip Peanut Butter Blondies

I'm not a peanut butter fan, but my family is. So I gave these a try. They were AWESOME! I made some minor modifications, like I cooked it for 25 minutes longer, but it could have been because of the type of pan.

This was great!!! I didn't alter at all, followed all the steps. Everyone, kids and adults LOVED it. Thanks for the recipe. My boyfriend that doesn't like cream cheese loved it ... but I didn't tell him what was in it. :)

Tres Leches Cake

The cake was good as far as flavor goes. I'm not too convinced on the textured. I don't know if I beat the eggs too much or what I did wrong, but the texture of the egg just didn't seem quite right. I've ate many tres leches cakes and this didn't seem to have that authentic taste, but it was good.

Southern Collard Greens

I thought it was okay, but nothing great. First it was way too greasy. Then the ham hocks, once cooked the chunks were too big, I think they should have been cut somewhere along the way. At the end, they made my stomach sick. The sad thing is, I love greens, but this was not what I was expecting.

The Best Meatloaf

This meatloaf was excellent. My whole family loved it. I followed it exactly as the directions stated. The only thing is, it was not very sturdy as a meatloaf. It seem to break quite easily, but never the less ... delicious.

Polish Sausage Soup

This was an excellent soup. All my family loved it. I took the advice of some of the previous cooks and sautéed the kielbasa and one whole onion until golden brown. I did not use two onions, that would have been way too much for us. Once sauteed I added the kielbasa and onions with the celery, carrots cut in quarters, and the red potatoes to the water in a big pot. For seasoning I added about 1 1/2 to 2 tsp. of dill, parsley, minced garlic, pepper, crushed bay leaves, about 1/4 tsp salt and 3 cubes of bouillon. Once served, I topped it with some DUBLINER cheese by Kerrygold. Its a cheese imported from Ireland so I don't know how easy it is to find, I just happened to come across it ... but it topped it perfect. Thanks for the recipe!
